My family loves taquitos and flautas because they’re one of the easiest high-protein snacks to grab when you’re hungry and on the go (or need a late-night movie snack). I was looking to fill my freezer with easy meals we could reheat throughout the week, but after making tacos more times than I could count, I was craving something completely different.
Instead of the usual taco flavors, I started thinking about cheeseburgers. Caramelized onions, melty cheese, pickles, and a creamy burger sauce sounded like the perfect combination tucked inside a crispy tortilla. The result is everything I love about a cheeseburger in a freezer-friendly taquito.
And of course, they had to be served with a burger sauce for dipping. Shake Shack has my favorite burger sauce, so I created a homemade version inspired by theirs that’s creamy, tangy, and the perfect finishing touch for these crispy taquitos.

Tips From My Kitchen
- Take your time with the onions. Cooking them low and slow develops a sweet, rich flavor that makes these taste like a gourmet cheeseburger. I throw these in the pan to cook while I chop my pickles, grate the cheese, and make the sauce.

- Roll them tightly. A snug roll helps the taquitos stay together while frying and keeps the filling from escaping.
- Freeze before reheating. These are one of my favorite freezer meals because they crisp back up beautifully in the air fryer. Let them fully cool before storing.

From caramelized onions and melty cheddar cheese to tangy dill pickles and a homemade Shake Shack-style burger sauce, each ingredient plays a role in creating that classic burger flavor in every bite.
Ground Beef – The foundation of the filling. An 85/15 or 90/10 blend gives you plenty of flavor while keeping excess grease manageable.
Yellow Onion – Cooking the onion until it’s deeply softened and lightly caramelized adds sweetness that makes these taste more like a classic cheeseburger.
Pickles – Chopped dill pickles bring the tangy crunch that every good cheeseburger needs and contrast the richness of the beef and cheese.

Optional Garlic Butter Finish: A quick brush of melted butter, fresh garlic, and parsley adds a rich, buttery finish. It’s optional, but if you don’t mind sacrificing a little crispiness for extra flavor, I highly recommend it.
How to Make Cheeseburger Taquitos
These taquitos come together in four simple steps: make the burger sauce, prepare the cheeseburger filling, roll the taquitos, and shallow fry until golden and crispy.
Make the Burger Sauce
Prepare your homemade Shake Shack-inspired burger sauce and refrigerate until you’re ready to use.
Caramelize the Onions
Heat olive oil in a large skillet over medium-low heat.
Add the diced onion along with a small pinch of salt and cook slowly, stirring often, until the onions are very soft and lightly caramelized. This usually takes about 15 minutes.
Transfer the onions to a bowl.
Cook the Ground Beef
Add the ground beef to the same skillet over medium heat.
Break it apart with a wooden spoon as it cooks, allowing the meat to develop some browning before stirring too frequently. Continue cooking until no pink remains and the beef is fully cooked.
If excess grease remains in the skillet, carefully use tongs and folded paper towels to absorb it before discarding.
Return the caramelized onions to the skillet.
Add the chopped pickles and a couple of spoonfuls of the prepared burger sauce.
Stir until everything is evenly combined, then remove from the heat.



Assemble the Taquitos
Lay a flour tortilla flat on your work surface.
Spoon about ¼ cup of the cheeseburger filling across the center of the tortilla, shaping it into a narrow line that extends almost from one side to the other. Leave about an inch of tortilla uncovered on both ends.
Sprinkle the filling with shredded cheese.
Roll the tortilla tightly around the filling, gently tucking everything in as you roll. If a little filling escapes from the ends, push it back inside before finishing the roll.
Repeat with the remaining tortillas.






Fry Until Crispy
Heat a thin layer of oil in a clean skillet over medium-low heat.
Working in batches, place the taquitos seam-side down in the skillet.
Cook until lightly golden before turning. Continue rotating them until all four sides are evenly crisp and golden brown.
Transfer to a paper towel-lined plate.
Serve immediately with plenty of burger sauce for dipping.


Garlic Butter Finish
While the taquitos are still warm, stir together the melted butter, minced garlic, and chopped parsley, then brush the mixture evenly over the tops. This simple finishing touch adds rich garlic butter flavor and a fresh pop of color. If you prefer the crispiest taquitos possible, feel free to skip this optional step, as the butter will soften the exterior slightly.
How to Serve & Store
These Cheeseburger Taquitos are best served hot with plenty of homemade burger sauce on the side for dipping. Pair them with crispy French fries, onion rings, a simple salad, or fresh fruit for an easy family meal.
They’re also perfect for meal prep. Once cooled, freeze the taquitos in a single layer before transferring them to a freezer-safe bag or container. Reheat them straight from frozen in the air fryer until they’re hot throughout and crispy again.

Ingredients

- 1 yellow onion, diced

- 1 pound ground beef
- ⅓ cup diced dill pickles
- 2 tablespoons homemade burger sauce, recipe below
- 2 cup shredded cheddar cheese
- 8 taco-size flour tortillas
- ¼ cup neutral oil, for shallow frying
Homemade Burger Sauce
- ½ cup mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon ketchup
- 1 teaspoon Worcestershire sauce
- 1 splash dill pickle brine
- 1 tablespoon finely minced dill pickle
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- Pinch of cayenne pepper
Optional Garlic Butter Finish
- 2 tablespoons butter, melted
- 2 garlic cloves, finely minced or grated
- ½ teaspoon dried parsley
Instructions
Caramelize the Onions
- Heat the olive oil in a large skillet over medium-low heat. Add the diced onion and a small pinch of salt. Cook, stirring occasionally, until the onions are very soft and lightly caramelized, about 15 minutes. Transfer to a plate.
Make the Burger Sauce
- In a small bowl, whisk together the mayonnaise, mustard, ketchup, Worcestershire sauce, pickle brine, minced pickle, garlic powder, paprika, and cayenne until smooth. Refrigerate while you prepare the taquitos.
Prepare the Filling
- Return the skillet to medium heat and add the ground beef. Cook, breaking it into small crumbles, until browned and fully cooked. If needed, carefully remove excess grease.
- Stir the caramelized onions back into the skillet along with the diced pickles and 2 tablespoons of the prepared burger sauce. Mix until evenly combined, then remove from the heat.
Assemble & Cook Taquitos
- Lay one tortilla on a flat surface. Spoon about ¼ cup of the beef mixture into the center, shaping it into a narrow strip. Sprinkle with about 2 tablespoons of shredded cheddar cheese, then roll tightly into a taquito. Repeat with the remaining tortillas.
