Behind This Cheeseburger Bowl Recipe

My husband and I were craving fast food one night but trying to eat a little lighter and more consciously, and the burger bowl trend I’ve been seeing everywhere felt like the perfect solution.

I loved the idea because it’s almost a salad, but it doesn’t feel like you’re settling for one when what you actually wanted was a burger and fries. There’s a huge bed of crisp shredded iceberg lettuce, but there’s also cheesy burger meat, caramelized onions, plenty of pickles, golden oven-baked fries and that creamy, tangy burger sauce drizzled all over everything.

Basically, I took the burger bowl trend and gave ours the In-N-Out treatment.

It came together surprisingly quickly and completely satisfied the fast-food craving. In fact, it was so good that my husband and I spent the next day looking forward to the leftovers.

Tips From My Kitchen

  • Shred the lettuce finely. Thinly shredded iceberg makes these bowls much easier to eat and gives you that classic burger-joint lettuce texture.
  • Give the onions time. Keep the heat around medium-low and let them soften and develop plenty of golden color. If the skillet gets dry or the browned bits start sticking, add a small splash of water and scrape them up.
  • Use the same skillet for the beef. Once the onions come out, the ground beef goes right in. Fewer dishes and any flavor left behind stays in your dinner.
  • Don’t skip the mustard and Worcestershire. You won’t necessarily taste either ingredient individually. They simply make the beef taste more savory and burger-like.
  • Melt the cheese off the heat. Lay American cheese over the hot beef, cover the skillet and remove it from the heat. The trapped steam melts the cheese without overcooking the meat.
  • Get the fries nice and crispy. They’re going over cold lettuce and underneath sauce, so give them enough time in the oven to develop plenty of crispness.
  • Sauce at the very end. Assemble everything first and then drizzle generously so the lettuce and fries retain their texture.
  • Don’t fear the Calabrian peppers. They’re optional, but their tangy heat is SO good against the creamy burger sauce.

Ingredients You’ll Need & Why

These Cheeseburger Bowls are made from familiar burger ingredients. The difference is how we layer them together to get a little bit of everything in each bite.

Ground Beef + Worcestershire + Yellow Mustard: Ground beef forms the base of our bowls, while Worcestershire and mustard add savory, tangy flavor without requiring a long list of seasonings.

American Cheese: Sometimes American cheese is simply the right cheese for the job, and a burger is one of those times. It melts beautifully over the crumbled beef and gives you that classic cheeseburger flavor.

Yellow Onions + Butter: Slowly cooking the onions in butter brings out their sweetness and gives these bowls that caramelized onion flavor I love on an In-N-Out-style burger.

Iceberg Lettuce: This is not the time for delicate spring mix! Cold, crunchy iceberg holds up underneath the warm burger meat and fries and gives the bowls their fresh, crisp base.

Dill Pickles: We use pickles twice: sliced pickles throughout the bowls and finely diced pickles in the burger sauce. Don’t throw away the brine because a spoonful goes into the sauce too.

French Fries: I use Alexia House Cut Fries and bake them until golden and crispy. Use your favorite frozen French fries here. About 4 cups gives every bowl a satisfying serving without making the fries the entire meal.

Mayonnaise + Ketchup + Mustard: The familiar creamy, tangy base of our In-N-Out-inspired burger sauce.

Pickle Brine: This cuts through the richness of the mayonnaise and gives the sauce an extra punch of pickle flavor. White vinegar works as a substitute.

Calabrian Peppers: Completely optional, but highly recommended if you like some heat. Their spicy, tangy flavor is especially good with the beef and creamy sauce.

How to Make Cheeseburger Bowls

Most of the components can be prepared while something else cooks, so these loaded bowls come together pretty quickly despite everything going into them.

Bake the Fries

Arrange the frozen French fries in a single layer on a large sheet pan and bake according to the package directions until deeply golden and crispy.

Season them with salt as soon as they come out of the oven.

Cook the Onions

While the fries bake, melt the butter in a large skillet over medium-low heat.

Add the diced onions with a small pinch of salt and cook for about 15–20 minutes, stirring frequently, until very soft and deeply golden. Add a small splash of water whenever needed to loosen browned bits from the skillet and prevent the onions from scorching.

Transfer the onions to a plate and tent loosely with foil to keep warm.

Cook the Burger Meat

Return the same skillet to medium heat and add a tablespoon of olive oil.

Add the ground beef and cook, breaking it into crumbles as it browns. Season with salt and black pepper, then stir in the Worcestershire sauce and yellow mustard.

Continue cooking until the beef is completely cooked through.

Melt the Cheese

Spread the cooked ground beef into an even layer and arrange the four slices of American cheese over the top.

Cover the skillet, remove it from the heat and let it sit for a few minutes. When you lift the lid, the cheese should be completely melted over the hot burger meat.

Make the In-N-Out-Style Sauce

Combine the mayonnaise, ketchup, yellow mustard, pickle brine, diced dill pickles, sugar, garlic powder, salt, and black pepper.

Stir until smooth and creamy, then taste and adjust the seasoning if needed.

Build the Burger Bowls

Start each bowl with a generous bed of finely shredded iceberg lettuce.

Top with one-quarter of the cheesy burger meat, caramelized onions, and dill pickle slices. Add a pile of hot, crispy fries and chopped Calabrian peppers if you’re using them.

Finish with a very generous drizzle of burger sauce over the whole thing.

You want to be able to get cool, crunchy lettuce, cheesy beef, sweet onions, salty fries, pickles, and creamy sauce together in one forkful.

Ingredients 

For the Burger Bowls

  • 4 cups frozen French fries such as Alexia House Cut Fries
  • Salt for seasoning fries
  • 2 tablespoons butter
  • 2 medium yellow onions diced
  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon salt plus more for onions as needed
  • 1/2 teaspoon freshly ground black pepper
  • 4 slices American cheese
  • 1 head iceberg lettuce finely shredded
  • 3/4 cup dill pickle slices
  • chopped Calabrian peppers optional, to taste

In-N-Out-Inspired Burger Sauce

  • 1/2 cup mayonnaise
  • 3 tablespoons ketchup
  • 2 teaspoons yellow mustard
  • 1 tablespoon dill pickle brine or white vinegar
  • 3 tablespoons finely diced dill pickles
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon garlic powder
  • pinch of salt
  • pinch of freshly ground black pepper

Instructions 

  • Make the burger sauce. Add the mayonnaise, ketchup, mustard, pickle brine, diced pickles, sugar, and garlic powder to a small bowl. Season with a pinch each of salt and black pepper, and stir until thoroughly combined. Taste and adjust seasoning if needed.
  • Bake the fries. Preheat the oven according to the fry package directions. Arrange the frozen fries in a single layer on a large sheet pan and cook according to package instructions until golden and crispy. Season with salt immediately after removing from the oven.
  • Cook the onions. While the fries cook, melt the butter in a large skillet over medium-low heat. Add the onions and a small pinch of salt. Cook for 15–20 minutes, stirring frequently, until very soft and deeply golden. If the skillet becomes dry or browned bits begin sticking, add a small splash of water and scrape the bottom of the skillet. Transfer the onions to a bowl and tent loosely with foil.
  • Cook the beef. Return the same skillet to medium heat and add the olive oil. Add the ground beef and cook, breaking it into crumbles. Season with 1/2 teaspoon each salt and black pepper. Add the Worcestershire sauce and yellow mustard and stir to combine. Continue cooking until the beef is browned and completely cooked through.
  • Melt the cheese. Spread the cooked beef evenly across the skillet. Arrange the American cheese slices over the beef, cover with a lid and remove the skillet from the heat. Let stand for 2–3 minutes, or until the cheese has melted.
  • Assemble the bowls. Divide the finely shredded iceberg lettuce among four bowls. Top each with one-quarter of the cheesy burger meat, caramelized onions, and dill pickle slices. Add crispy fries and chopped Calabrian peppers, if using.
  • Finish and serve. Generously drizzle the burger sauce over each bowl and serve immediately while the beef and fries are hot and the lettuce is cold and crisp.

Notes

  • Pickles: About 3/4 cup sliced dill pickles is a more consistent measurement than counting slices. Feel free to adjust depending on how pickle-heavy you like your burgers.
  • Onions: Fifteen to twenty minutes produces very soft, deeply golden onions. Keep the heat moderate and add small splashes of water as necessary to release browned bits and prevent scorching.
  • Burger sauce: Pickle brine is my first choice because it reinforces the pickle flavor, but white vinegar works as a substitute.
  • Fries: I use Alexia House Cut Fries, but any frozen fry you love will work. Cook them until especially crisp because they’ll eventually be topped with sauce.
  • Meal prep: Store the lettuce, sauce and pickles separately from the cooked beef and onions. Reheat the hot components and fries before assembling.

Variations & Substitutions

Make them spicy: Chopped Calabrian peppers are my favorite addition, but sliced pepperoncini or pickled jalapeños would also work.

Change the fries: Shoestring, crinkle-cut or waffle fries can all work. Just make sure they’re cooked until really crisp before adding them to the bowls.

Use a different cheese: Cheddar works, but American cheese is my first choice because of its classic burger flavor and how smoothly it melts over the ground beef.

Swap the pickle brine: If you’re out of pickle juice, use white vinegar in the burger sauce instead.

How to Serve & Store Leftovers

These Cheeseburger Bowls are already a complete meal, so I don’t think they need a side. The fries are built right in!

If you’re planning for leftovers, store the components separately. Refrigerate the cooked beef, onions, lettuce, pickles and burger sauce in separate airtight containers. The cooked beef and onions will keep for about 3–4 days.

Reheat the beef and onions until hot and crisp the fries back up in the oven or air fryer. Then assemble everything over cold lettuce just before eating. Keeping the hot and cold ingredients separate is what makes leftovers almost as good as the first night.
