Behind This Copycat Starbucks Egg Bites Recipe

The journey to recreating these copycat Starbucks egg bites took some trial and error. If you’ve had the egg bites at Starbucks, you know they don’t have the texture you’d expect from baked eggs. Instead, they have a silky smooth custard-like texture that just melts in your mouth.

You don’t get that texture if you just pour some whisked eggs into a muffin tin and pop them in the oven. I discovered there were two things that contributed to the custard-like texture. First, the addition of blended cottage cheese. The BLENDED part is very important. (It also adds flavor and extra protein, so it’s a win-win!)

Second, the cooking method. Adding a pan of water to the oven creates a sous vide-like atmosphere. It steams the eggs instead of just baking them, keeping them extra moist. It’s a similar idea to using a water bath for cheesecake.

The end result is these irresistibly delicious, cheesy, and filling egg bites with bacon and gruyere cheese. I love to make a double batch so there are always some in the freezer for busy mornings.

Tips from My Kitchen

  • Fully blend the cottage cheese. Depending on the strength of your blender or food processor, this usually takes about a minute. It should be smooth and creamy, with no curds left.
  • The steam pan is a must. The pan of hot water at the bottom of the oven replaces the need for a fancy sous vide technique. It should be hot when you add it to the oven, so that it immediately begins to steam.
  • Keep the oven door closed. The only time you should open the oven door after adding the steam pan is when you put the muffin pan in and when you remove it. It’s important to keep the steam inside so that it can cook the eggs.
  • Customize with your favorite toppings. I stuck with gruyere and bacon here, to mimic the popular Starbucks flavor combo. But you’re welcome to swap the bacon for ham, sausage, or mushrooms, and use your favorite cheese.

Key Ingredients

It’s hard to imagine that something so tasty requires so few ingredients! The exact measurements can be found in the recipe card below.

  • Bacon – I like to dice it first so that it cooks faster.
  • Eggs – We use the whole eggs for this recipe, though you could absolutely make an egg white version.
  • Cottage cheese – The cottage cheese is one of the things that gives these egg bites the silky smooth texture.
  • Gruyere cheese – Freshly shredded, if at all possible! You can substitute with other types of cheese but gruyere is what Starbucks uses.
  • Cornstarch – Helps add structure and texture to the egg bites.
  • Hot sauce – Adjust the amount to your preference. I like to add a few teaspoons for flavor.
  • Salt & pepper – The only seasonings needed!

How to Make Starbucks Egg Bites with Bacon

This copycat recipe is so simple and easy to make. You can have a whole batch ready to enjoy in the time it’d take to wait in line at Starbucks! The printable instructions can be found in the recipe card below.

  • Prep. Preheat the oven to 300 degrees. Spray the muffin pan with nonstick spray.
  • Cook the bacon. Dice the bacon and cook until crisp. Set aside on paper towels.
  • Blend. Blend the cottage cheese until whipped smooth with no curds (about 1 minute). Add the eggs, 1 1/2 cups gruyere, hot sauce, spices, and cornstarch. Blend until everything is combined.
  • Add the steam tray. Pour boiling water into a casserole dish, filled halfway. Place on the bottom rack in the oven. Close the door immediately.
  • Assemble. Divide the egg mixture into the muffin tins, filling each one almost to the top. Add a pinch of cheese to each and push it down with a spoon. Top with bacon.
  • Bake. Place the muffin tray on the center rack, above the steam tray. Bake for 20-25 minutes. The eggs should be set and no longer jiggly.

Make Ahead & Storage

These bacon and gruyere egg bites are excellent for breakfast meal prep!

They can be stored in an airtight container in the fridge for up to 3 days. But they can be stored in the freezer for up to 3 months!

The best part is that you can just pop them in the microwave from frozen for about 90 seconds and breakfast is ready to go.

Ingredients 

  • 8 slices bacon diced
  • 8 whole eggs
  • 16 ounces cottage cheese
  • 2 cups shredded gruyere divided
  • 2 tablespoons cornstarch
  • 2-3 teaspoons hot sauce more or less depending on your preference
  • 1/4 tsp salt
  • 1/4 tsp freshly ground pepper
  • Nonstick spray

Instructions 

  • Preheat oven to 300 degrees. Spray a muffin pan with nonstick spray. Get the diced bacon cooked to crisp and set aside on paper towels to absorb excess grease.
  • Using a food processor (recommended) or a blender, blend the cottage cheese for about 1 minutes or until it’s whipped smooth with no curds. Into the same food processor, add in the eggs, 1 1/2 cups gruyere, hot sauce, salt/pepper, and cornstarch. Blend until combined and smooth.
  • Get a pot or kettle of water boiled on the stove and pour it into a casserole dish placed on the bottom rack in the oven, enough water to come halfway up the pan. Close the oven immediately to capture the steam inside.
  • Divide the egg mixture evenly among each cavity in the muffin pan, filling them almost to the top. Add a generous pinch of cheese to each muffin, using a spoon to push the cheese to the center. Top each cup with a generous amount of bacon.
  • Place the egg bite tray into the oven on the center rack (with the steam tray remaining in the oven on the rack below). Bake for 20-25 minutes or until the eggs are set and no longer jiggly.

    I modified the recipe, quite a bit. I only had 4 slices of bacon, I used a pint of egg whites and 2whole eggs, only had about 1/3 cup cottage cheese & forgot the cornstarch. I try to cut back on salt so 4 slices was just enough. I have been using jumbo silicone muffin pans for some time, I added about 6-7 extra minutes of cook time.
    These are great topped with your favorite salsa!!!!

    We first made these in a metal muffin tin and they turned out great. We got a silicone muffin tin and they did not cook very well. Would you suggest upping the heat when cooking them in the silicone muffin tin? Not sure what to do, but it is much easier cooking them in the silicone tin compared to the metal tin. Either way, yummy recipe!

    These are delicious! I recently developed an egg allergy and made these with Just Egg vegan egg substitute. I had to add about 10 minutes more cook time to get the sub to set, but they are so good!

    These turned out great. My only comment is that the (2) TBSP of corn starch is a lot and can affect some people’s blood sugar. It has a GI greater than table sugar. I ate two and my blood sugar has been spiked all morning :). I’m not diabetic – just don’t eat much sugar which means I am more sensitive. Trying to figure out why my blood sugar was high, I learned corn starch acts like sugar to the body and spikes GI more than regular sugar.

    Next time I will leave it out and see how these turn out.

        Yes! The steam goes on the rack below and remains in the oven the whole time. This creates a super silky texture in the eggs by imparting moisture into the air.
