Brie – creamy, buttery and slightly earthy, brie cheese is so delicious and if you can find it, grab a triple cream brie.

Cranberry sauce – a batch of homemade cranberry sauce is most ideal but you can also use cranberry preserves.

Puff Pastry – just a frozen box of pre-made puff pastry is all you’ll need. You won’t need to make anything from scratch here.

Pecans – crushed pecans are used as a topping for this poppable creamy, tangy brie bites.

Rosemary sprigs – the perfect garnish to really amp up the holiday vibes.

How to Make Baked Brie Cranberry Puff Pastry

Step 1: Freeze the Cubed Brie

Dice the brie into 1″ pieces, place them on a plate and pop in the freezer for 20 minutes while preparing the other ingredients.

Step 2: Roll and Cut the Puff Pastry

On a lightly floured surface, roll the puff pastry to a rectangle and cut the puff pastry into 24 equal sized squares.

Grease a muffin pan and press the puff pastry squares down into each crevice. Pierce the bottom of the puff pastry with a fork a few times.

Step 3: Add in the Fillings

Add one brie square into the bottom of each puff pastry. Top the brie with a spoonful of cranberry sauce. Then sprinkle over some sea salt, and the pecans.

Step 4: Bake and Enjoy!

Place the muffin pan atop a baking sheet to catch any spillage during the bake time. Bake in a preheated oven at 375 degrees for 20 minutes.

Once they cool, top with a small sprig of rosemary. Serve hot or at room temperature.

Variations and Modifications

Raspberry Brie Bites: consider swapping the cranberry for tart and sweet raspberry jam.

Aside from swapping out the cranberry, you can also make these variations:

  • Swap the pecans for walnuts, macadamia nuts, or almonds
  • Crispy bacon bits are a great salty addition to these brie bites.

Storage and Reheating

These baked brie cranberry bites are best served fresh. Puff pastry never comes back to life quite like when it’s freshly baked. That said, they can be reheated and they’ll still be very tasty.

How to Store: once the baked brie bites have cooled, place them in an air tight container, separating layers with foil or parchment paper. Refrigerate up to 4 days.

How to Reheat: To reheat these, pop them back into a muffin pan and bake in a pre-heated oven at 350 degrees until they are warmed through. Baking them will help the puff pastry crisp up. If they are microwaved the pastry dough will turn soft.

Ingredients 

  • 1 sheet prepared frozen puff pastry thawed in fridge overnight
  • 4 oz brie triple cream if possible
  • 1/2 cup prepared cranberry sauce
  • 1/4 cup chopped pecans
  • 1/2 tsp flaky sea salt
  • 2 sprigs rosemary cut into 24 small sprigs

Instructions 

  • Preheat oven to 375 degrees. Spray muffin pans with nonstick cooking spray. Use two-12 count muffin pans or 1-24 count muffin pan. (If you only have one-12 count pan, make the brie bites in batches*.)
  • Dice the brie into 24 equal sized pieces, about 1". Place them on a plate and pop in the freezer for 20 minutes while preparing the other ingredients.
  • On a lightly floured surface, roll the puff pastry to a 10×14 rectangle and cut the puff pastry into 24 equal sized squares.
  • Press the puff pastry squares down into each crevice. Pierce the bottom of the puff pastry with a fork a few times.
  • Add one brie square into the bottom of each puff pastry. Top the brie with a spoonful of cranberry sauce. Then sprinkle over some sea salt, and the pecans.
  • Place the muffin pan atop a baking sheet to catch any spillage during the bake time. Bake in a preheated oven for 20 minutes.
  • If any of the brie bubbles out of the pan, scoot it back into the center of the puff pastry with a spoon while it's still pliable. Once they cool, top with a small sprig of rosemary. Serve hot or at room temperature.

Notes

*If you just have one pan and need to make the brie bites in batches, leave the puff pastry squares in the fridge covered with plastic wrap until ready to use. Place the remaining brie bites in the freezer until you assemble the second batch.
