Sometimes the best recipes come from simply asking, what if?

One day I found myself wondering what a lasagna would taste like without the pasta. Instead of noodles, I imagined layering everything over fluffy mashed potatoes, almost like the way chili cheese baked potatoes work so well together. It sounded indulgent, comforting, and honestly too good not to try.

The result completely exceeded my expectations. Every bite is creamy from the alfredo sauce-smothered potatoes, rich with homemade meat sauce, and topped with a thick layer of bubbly monterey Jack cheese. It’s everything I love about lasagna, but somehow even cozier (especially when it’s paired with a crusty bread for dipping!).

Variations & Tips From My Kitchen

  • Leave the potatoes slightly rustic. Don’t mash them completely smooth. A little texture gives the casserole a heartier feel.
  • Use freshly shredded cheese. It melts much more smoothly than pre-shredded cheese and doesn’t have any cellulose additives (the powdered substance to prevent the cheese from sticking to each other).
  • Simmer the meat sauce. Even a few extra minutes helps deepen the tomato flavor.
  • Let it rest. Waiting 10 minutes before serving this baked lasagna allows the layers to set and the sauces to redistribute.
  • Bake on a foil-lined sheet pan. Arguably my most important tip 🙂 This casserole is full, and catching any spill-over makes cleanup much easier than cleaning the bottom of your oven.
  • Swap the protein. Instead of ground beef, you can use ground Italian sausage, ground turkey/chicken, or any combination.

This recipe is built with familiar comfort food ingredients, but layering them in a new way creates something that feels both nostalgic and completely unique. Every layer brings a different texture, from the creamy potatoes to the rich meat sauce and silky Alfredo.

Russet Potatoes – Russets mash beautifully while still holding a little texture. I like leaving them slightly rustic instead of perfectly smooth so each layer has more character.

Ground Beef – The hearty foundation of the meat sauce. Browning it well develops deep flavor before the tomatoes are added.

Tomato Paste – Cooking the tomato paste with the beef intensifies its sweetness and richness, giving the sauce a slow-simmered flavor.

Homemade Alfredo Sauce – The creamy contrast that makes this recipe so unique. It ties the potatoes and meat sauce together while adding richness to every bite.

Monterey Jack Cheese – This cheese melts beautifully into a gooey, bubbly topping without overpowering the other flavors.

Ingredients 

  • 2 pounds russet potatoes, peeled and quartered
  • cups freshly shredded Monterey Jack cheese

Meat Sauce

  • 1 pound ground beef
  • salt and black pepper, for seasoning beef
  • 1 medium yellow onion, finely diced
  • 3 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 15 oz can crushed tomatoes, preferably San Marzano
  • 1 8-ounce can tomato sauce
  • ¼ cup water
  • a few dashes hot sauce Texas Pete, Crystal, etc
  • 1 tablespoon granulated sugar
  • teaspoons Italian seasoning
  • 1 teaspoon salt

Alfredo Sauce

  • 4 tablespoons butter
  • 1 tablespoon minced garlic
  • 1 cup half-and-half
  • 1 cup heavy cream
  • salt and black pepper, to taste
  • 1 cup freshly grated Parmesan cheese

Instructions 

Prepare the Potatoes

  • Place the peeled and quartered potatoes in a large pot and cover with cold water.
  • Bring to a boil and cook for about 15 minutes, or until completely fork-tender.
  • Drain the potatoes very well, then roughly mash with a potato masher. Leave some texture rather than mashing completely smooth.

Make the Meat Sauce

  • While the potatoes are cooking, heat a large skillet over medium heat. Add the ground beef and season with salt and pepper. Cook, breaking the beef into small crumbles as it browns.
  • Add the diced onion while the beef is still cooking. Continue cooking until the beef is browned throughout and the onion is softened and translucent.
  • Carefully remove any excess grease from the skillet using folded paper towels and tongs.
  • Stir in the tomato paste and cook for about 1 minute.
  • Add the Worcestershire sauce, crushed tomatoes, and tomato sauce. Fill the empty tomato sauce can or jar with ¼ cup of water, swirl it around to rinse out every last bit of sauce, then pour it into the skillet along with hot sauce, sugar, Italian seasoning, and salt.
  • Bring the sauce to a gentle boil, then reduce the heat and simmer for several minutes until slightly thickened. Remove from the heat.

Make the Alfredo Sauce

  • Melt the butter in a saucepan over medium-low heat. Add the garlic and cook just until fragrant.
  • Pour in the half-and-half and heavy cream. Season with salt, pepper.
  • Bring to a gentle simmer and cook for about 5 minutes, whisking frequently.
  • Add the Parmesan and whisk until melted and the sauce begins to thicken. Remove from the heat. The Alfredo will continue to thicken as it rests.

Assemble the Layers

  • Preheat the oven to 375°F. Place a deep 9×9 pan on a foil-lined baking sheet.
  • Spread half of the potatoes evenly across the bottom of the pie dish.
  • Spoon about ⅔ cup Alfredo sauce over the potatoes, spreading it evenly.
  • Spread half of the meat sauce over the Alfredo.
  • Repeat with the remaining potatoes, another layer of Alfredo sauce, and the remaining meat sauce.
  • Cover the top evenly with the shredded Monterey Jack cheese.

Bake

  • Bake for about 30 minutes, or until the cheese is completely melted, bubbling around the edges, and lightly browned on top.
  • Let the casserole rest for 10 minutes before scooping and serving.

Notes

  • This recipe fills a deep 9-inch pie dish. If using a standard pie dish, you may have a little extra meat sauce or mashed potatoes depending on the depth of your dish. You can alternatively use a 9×13 pan but the layers will be thinner so I recommend 9×9. 
  • Keep the potatoes rustic. Roughly mashing them instead of whipping them smooth gives the casserole more structure and texture.
  • Brown the beef well. Give the beef some time against the skillet before constantly stirring so it develops better flavor.
  • Cook the tomato paste briefly. Letting it cook before adding the tomatoes removes the raw flavor and deepens the sauce.
  • Homemade or store-bought Alfredo works. Homemade gives you the richest result, but refrigerated Alfredo is an easy shortcut when time is tight.
  • Freshly shred the cheese. Monterey Jack melts much smoother and creamier when shredded from a block.
  • Use a sheet pan underneath. The casserole is filled almost to the top and may bubble over while baking.
  • Don’t skip the resting time. Ten minutes allows the sauces to settle into the potato layers so each scoop holds together better.
  • Make ahead. Assemble up to 24 hours in advance and refrigerate tightly covered. Add a few extra minutes of baking time if starting cold.

This Mashed Potato Lasagna comes together in four stages: boil the potatoes, prepare the meat sauce while they cook, make a quick homemade Alfredo, then layer everything together before baking until bubbly and golden.

Cook the Potatoes

Peel and quarter the russet potatoes, then place them into a large pot of cold water. Bring the water to a boil and cook until the potatoes are fork-tender, about 15 minutes. Drain them well, then roughly mash with a potato masher, leaving a little texture instead of making them completely smooth.

Make the Meat Sauce

While the potatoes are cooking, brown the ground beef in a large skillet over medium heat, seasoning it with salt and pepper as it cooks. Add the diced onion and continue cooking until the beef is browned and the onion is softened. Stir in the tomato paste, then add the Worcestershire sauce, crushed tomatoes, tomato sauce, and ¼ cup of water (I like to pour the water into the empty tomato sauce can first to rinse out every last bit before adding it to the skillet). Finish with the hot sauce, sugar, Italian seasoning, and salt, then let the sauce gently simmer for a few minutes while you prepare the Alfredo.

Make the Alfredo

In a saucepan, melt the butter with the garlic until fragrant. Whisk in the half-and-half and heavy cream, season to taste, then let it gently simmer for about 5 minutes. Stir in the Parmesan until the sauce is smooth and creamy, then remove it from the heat.

Layer the Casserole

Spread half of the mashed potatoes into the bottom of a deep pie dish, followed by an even layer of Alfredo sauce and half of the meat sauce. Repeat with the remaining potatoes, Alfredo, and meat sauce, then finish with a thick layer of freshly shredded Monterey Jack cheese.

Bake, Rest & Serve

Place the pie dish on a foil-lined baking sheet and bake at 375°F for about 30 minutes, or until the cheese is melted, bubbly, and lightly browned around the edges.

Let the casserole rest for about 10 minutes before serving so the layers have time to settle. Scoop onto plates and serve with a crisp Caesar salad and plenty of crusty bread for soaking up every bit of the creamy Alfredo and rich meat sauce.

How to Serve & Store

This Mashed Potato Lasagna is rich and hearty, so I love pairing it with something fresh like a Caesar salad or simple green salad. Crusty garlic bread is also perfect here because there are always little pockets of meat sauce and Alfredo worth scooping up.

Store leftovers tightly covered in the refrigerator for up to 4 days. Reheat individual portions in the microwave, or cover the baking dish with foil and warm it in a 350°F oven until heated through.

You can also assemble the casserole a day ahead, cover it tightly, and refrigerate it before baking. If you’re baking it straight from the refrigerator, expect it to need a little additional oven time since the center will be cold.
