An easy creamy (and egg-free)  corn casserole with a kick of sweetness and plenty of cheese, this is a side dish you cannot skip over. Easy to make, just dump, stir and bake. This easy recipe is a spin on Paula Deen’s famous corn casserole, with a few small changes.

Creamed Corn – one standard sized can of creamed style corn
Sweet Corn – either fresh (if it’s in season) or frozen sweet corn
Sour Cream – adds creaminess and tang
Jiffy Cornbread Mix – one box is all you’ll need
Sugar – this may be a surprising ingredient, but a little sugar takes this recipe over the top
Cheese – shredded cheddar and pepper jack (or Monterey jack/mozzarella) add the gooey cheesiness

How to Make Jiffy Corn Casserole?

This cheesy corn casserole can be made in the oven in a casserole dish or cast iron skillet, or you can dump the ingredients in a slow cooker and set it and forget it. 

Oven Method:

Step 1: Preheat oven to 350 degrees. Grease an 8×8 pan or cast iron skillet with softened butter and set aside.

Step 2: In a large bowl, combine all ingredients including half of the cheddar cheese, reserving 1 cup. Pour into the prepared baking dish and bake uncovered for 45 minutes.

Step 3: Top with shredded cheddar. Bake for an additional 10-15 minutes, until the top begins to bubble and brown.

Crock Pot Preparation

Step 1: In a large bowl, combine all ingredients except for the cheddar cheese. Add it to a lightly greased Crock Pot.

Step 2: Cook on high for 2-3 hours or on low for 4. Add the shredded cheddar during the last 20 minutes of cooking. Ensure the center is firm and set prior to serving.

Yes, Jiffy corn casserole couldn’t be any easier to make.  With just 6-ingredients that are simply dumped and stirred together, it doesn’t get any simpler than this corn dish. Bake it in the oven or in a slow cooker.

Can I Make Jiffy Corn Casserole Ahead of Time? 

This corn casserole can be prepared up to 48 hours ahead. Mix all of the ingredients together and place them in a buttered casserole dish, covered tightly with cling wrap and refrigerate until ready to bake. Once you are ready to bake the casserole, remove the casserole from the fridge for 30 minutes prior to baking to remove the chill. Bake according to the recipe instructions.

Ingredients 

  • 14.75 oz. creamed corn
  • 10 oz. frozen sweet corn thawed
  • 8.5 oz. Jiffy corn muffin mix
  • 1 tablespoon sugar
  • 8 oz. sour cream
