You’ll love this simple and short list of ingredients for the best crock pot creamed corn you’ve ever had!

Corn – fresh super sweet corn is preferred but frozen or canned corn can be substituted.

Butter – essential in this comforting side dish recipe.

Cream Cheese – this is the base of the creamed corn and the main creamy component.

Half and Half – just a small amount of half and half is used to help loosen up the creamed corn. Milk can be substituted.

Sugar – just a few tablespoons to amp up the natural sweetness of the corn.

Parmesan – a good quality parmesan will go a long way in this recipe. I prefer a quality parmesan still on the rind and freshly grated.

Seasonings – we keep it really simple with seasonings since the corn is the star. Just salt, freshly cracked pepper and a pinch of cayenne is all you need.

How to Make Crock Pot Creamed Corn

I almost feel silly listing these instructions because there really isn’t anything to it!

Dump Ingredients In

Combine all ingredients except Parmesan in a slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.

Add Finishing Touches

Then add 1/2 cup grated Parmesan cheese. Adjust the salt and pepper as needed. Yup, it’s really that easy!

Substitutions and Variations

  • Want it lightened up? You can swap the cream cheese for low fat creamed cheese and use milk instead of half and half. You can also use half the amount of butter. Of course this will yield a much less decadent consistency and taste.
  • Looking to spice it up? Add sliced jalapeños (fresh or pickled). I prefer to add them half way through cooking. You can also amp up the cayenne or add red pepper flakes

How to Store Leftovers?

In the unlikely event you have leftover creamed corn (it’s THAT good!), it can be easily stored in an airtight container in the fridge for up to 4 days.

To reheat, just place the desired portion in a microwave safe bowl and reheat until heated through, about 1 minute.

Ingredients 

  • 5-6 cups super sweet corn, fresh frozen or canned work too
  • 1 stick butter cut into cubes
  • 1 block 8 oz cream cheese, divided
  • into chunks
  • 1/3 cup half and half
  • 2 tablespoons granulated sugar
  • 1 tsp salt
  • 1/2 tsp pepper
  • Pinch of cayenne
  • 1/2 cup grated Parmesan

Instructions 

  • Combine all ingredients except Parmesan in a slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  • Then add 1/2 cup grated Parmesan cheese. Adjust the salt and pepper as needed.

Notes

  • If using frozen corn, there is no need to thaw it first. It can go straight from the freezer bag into the crock pot without having to defrost it first.
