This Cake Batter Popcorn is a fun, sweet, and salty treat for kids and adults to enjoy. We toss buttered popcorn in a gooey marshmallow base that’s combined with actual funfetti cake batter!

Cake Batter Popcorn
We made this treat for the first time last year for the Fourth of July weekend. It was unanimously agreed that this birthday cake-flavored popcorn was gooey, full of Funfetti flavor, and perfectly addictive.
Plus, the sprinkles add just the right amount of crunchy texture, and the sweet and salty combination makes it hard to stop eating.
If you want to take this to another level, I highly suggest buying some popcorn for your local movie theater. It’s far superior to the popcorn bags you microwave.
Key Ingredients
Popcorn – buttered popcorn balances out the sweetness. I do prefer movie theater popcorn to microwaveable kind, but you can use your preferred type.
Marshmallow – I prefer miniature marshmallows as they melt evenly.
Butter – one stick is used for this recipe.
Funfetti Cake Mix – yup, literal cake mix is used. We will heat-treat this to ensure the flour isn’t raw.
Rice Krispies Cereal – I selected a colored option for extra seasonal vibes.
Sprinkles – jimmies are ideal, but choose your favorite kind.
How to Make Cake Batter Popcorn
We can make this easy desserts with just three simple steps:
- Melt butter over medium-low heat in a large saucepan. Add marshmallows and stir continuously until melted and smooth. Add in vanilla extract and mix again.
- Stir in Funfetti cake mix until no clumps remain. Fold in the Rice Krispies cereal. Then fold in the popcorn.
- Add the sprinkles as you mix the popcorn to distribute evenly. Lay the mixture into an even layer on parchment paper to set. Sprinkle with flaky sea salt to taste.
