There are some dinners that just instantly feel like comfort food the moment you smell them cooking. This slow cooker chicken and potatoes recipe is one of those meals in our house.

It’s one of my favorite set-it-and-forget-it dinners when I want something hearty without hovering over the stove all evening. The slow cooker does most of the work while the chicken becomes tender and the potatoes soak up all the ranch, garlic, and buttery flavor.

And once the cheese melts over everything and the crispy bacon gets sprinkled on top… it becomes the kind of meal everyone goes back for seconds of.

Tips From My Kitchen

Cook bacon separately until crispy. It adds the perfect finishing crunch.

Cut the potatoes evenly. About 1-inch pieces cook perfectly in the slow cooker.

Use freshly grated cheese if possible. It melts more smoothly than pre-shredded.

Don’t skip draining some liquid. This keeps the sauce creamy instead of soupy.

Add cheese at the very end. This prevents it from becoming oily during slow cooking.

Red potatoes, chicken, ranch dressing, and a blend of cheeses are the foundation of this slow cooker meal that cooks low and slow for a simple one-pot dinner. Here are the key ingredients you’ll need to make this slow cooker chicken and potatoes:

  • Chicken breast or tenders – Tender chunks of chicken cook perfectly in the slow cooker.
  • Red potatoes – Hold their shape well during long cooking and become buttery soft.
  • Ranch dressing and seasoning – Adds that classic tangy ranch flavor throughout the dish.
  • Butter and garlic – Create a rich base that flavors both the chicken and potatoes.
  • Sour cream – Adds creaminess and helps create the sauce.
  • Cheddar, mozzarella, and parmesan – A combination that melts beautifully and adds bold cheesy flavor.
  • Crispy bacon – The salty, crunchy topping that pulls everything together.

How to Make Slow Cooker Chicken & Potatoes

This cozy dinner is so easy to set and forget in a crockpot. Here’s how it comes together:

Load the Slow Cooker

Start by cutting the potatoes into 1-inch chunks and adding them to the bottom of the slow cooker. Dice the chicken into slightly larger pieces and place them on top of the potatoes.

Sprinkle the paprika, onion powder, ranch seasoning, salt, and pepper over the chicken and potatoes.

Drizzle about ½ cup of ranch dressing over everything and toss gently so the seasoning coats all the pieces.

Scatter the butter cubes and minced garlic across the top.

Slow Cook Until Tender

Cover the slow cooker and cook:

  • LOW for about 6 hours
  • HIGH for about 4 hours

When it’s ready, the potatoes should be fork-tender and the chicken fully cooked and juicy.

At this stage, you’ll notice some liquid at the bottom of the slow cooker — that’s normal.

Create the Creamy Ranch Sauce

Give the chicken and potatoes a good stir to combine everything.

Spoon out about ⅓ cup of the excess liquid to keep the final dish creamy instead of watery.

Add the sour cream and the remaining ranch dressing. Stir everything together so the chicken and potatoes become coated in the creamy ranch sauce.

Let it cook another 30–45 minutes so the sauce warms through.

Add the Cheese

Sprinkle the cheddar, mozzarella, and parmesan evenly over the top.

Cover again and allow the cheese to melt for about 15 minutes until bubbly and gooey.

Finish with Bacon and Herbs

Right before serving, sprinkle the crispy chopped bacon and fresh chives over the top.

The bacon adds the perfect salty crunch to balance the creamy ranch sauce.

Ingredients 

  • 1.5 lbs boneless, skinless chicken breast or tenders thighs work too
  • 2 lbs red potatoes
  • 2/3 cup ranch dressing, divided
  • 1 tablespoon paprika
  • 2 teaspoons onion powder
  • 1 tablespoon ranch seasoning
  • 1 tsp each salt and pepper
  • 6 tablespoons butter, cubed
  • 5 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/2 cup parmesan, grated
  • 1 cup cheddar cheese, shredded
  • 1/2 cup mozzarella, shredded
  • 5 strips bacon, cooked crispy and diced
  • 2 tablespoons chives, minced

Instructions 

  • Dice potatoes into 1" pieces and add to the slow cooker. Dice chicken into 2" pieces and add to the slow cooker. Add in all the seasonings and 1/2 cup ranch dressing then toss the chicken and potatoes until well incorporated.
    Add butter cubes and garlic. Cook on low for 6 hours or on high for 4 hours.
  • Toss the chicken and potatoes and spoon out 1/3 cup of excess liquid (leaving some behind is ok).
    Add in sour cream and remaining 1/3 cup ranch dressing. Return the lid and cook another 30-45 minutes so the sour cream warms through. Toss together to incorporate sour cream and ranch.
  • Top with all three cheeses, cover and allow to cook until it melts, about 15 minutes. Top with chives and crispy bacon and enjoy.

    So yummy! I ended up shredding the chicken instead of cubes (itโ€™s only my second time using a crockpot). We topped it with some extra sour cream & it came out delicious! My husband basically ate the bowl ๐Ÿ˜†

    In the recipe it says slow cook for 4 on high or 6 on low. At top of the recipe it says 5 hours. Which is better?

      Hello! Itโ€™s really a matter of preference whether youโ€™d like the finish time to be 4 hours out or 6 hours out from when you prepare it. The result will be the same. At the top of the recipe, I split the difference to give people an estimate of how long this recipe may take. When I cooked this, I used high for 4 hours and thatโ€™s usually my personal preference.
