Here is a super easy and nostalgic recipe that only needs three ingredients, Blueberry Pancake Sausage Muffins.

These little breakfast pancake muffins combine soft and fluffy blueberry pancakes and breakfast sausage, baked together into little bite sized pieces. Perfect for meal prep and breakfast on the go. 

Blueberry Pancake Sausage Muffin Bites

These pancake sausage muffins tastes just like Mcgriddles! They are great for breakfast on the go and makes eating in the car a synch. We also love to keep them in the freezer to just pop in the microwave for a last minute instant breakfast.

Three Ingredient Blueberry Pancake Sausage Muffins

There are few things better than a delicious bite-sized recipe that is also easy to make and only requires three ingredients. Here is all you will need:

  • Blueberry Pancake Mix (you can sub for original/buttermilk pancake mix instead)
  • Milk – I prefer whole milk but you can use any milk of your choice
  • Sausage – turkey sausage, pork sausage, chicken sausage, etc.

 

How to Make Pancake Sausage Muffins

In just a few easy steps you can have these delicious pancake sausage muffins on your table. 

  1. Make the pancake batter by simply whisking together blueberry pancake batter with milk until just combined.
  2. Brown the breakfast sausage links in a pan on the stove according to the package instructions. Cut each link into three pieces.
  3. Spray a mini muffin pan with non stick spray and fill each one halfway with pancake batter.
  4. Insert one piece of sausage into each muffin then bake about 10 minutes.

  • Swirl pancake syrup into the batter before 
  • You can use pork, chicken, or turkey sausage links for these pancake sausage muffins. 
    • You can even skip the sausage altogether and sub for crispy bacon.
  • Meal prep friendly! These pancake muffins can be portioned out into serving size freezer bags and stored in the freezer.
    • To reheat, just place in the microwave until cooked through.
  • Don’t have a mini muffin tray? You can substitute for a standard size muffin pan. Just be sure to add a few extra pieces of sausage into the batter.

Ingredients 

  • 2 cups Krusteaz blueberry pancake mix this is the best brand (Great Value is also good but avoid the Target version)
  • 1 1/3 cups milk
  • 8 links pre-cooked breakfast sausage links
  • optional: maple syrup and butter
  • non stick spray for the muffin pan

Instructions 

  • Preheat the oven to 350 degrees.
  • Make the pancake batter by simply whisking together blueberry pancake mix with milk until just combined. Be careful not to overmix, small clumps are ok.
  • Brown the breakfast sausage links in a pan on the stove according to the package instructions. Once they are finished, cut each link into three pieces.
  • Spray a mini muffin pan with non stick spray and fill each one halfway with pancake batter.
  • Insert one piece of sausage into the center each muffin then bake about 10 minutes or until golden brown on the edges. Enjoy warm with syrup.

Notes
