Cherry Almond Mascarpone Dip Recipe

Is it just me or is cherry and almond one of the best flavor combinations for desserts? This super easy Cherry Almond Mascarpone Dessert Dip can be ready in 15 minutes with just a few ingredients. It’s relatively light and a perfect sweet finish to an indulgent meal if you just need a little something sweet. With this really cute presentation on a wood board or tray, it will certainly make your guests think you put in a lot more effort than you did, which is always a bonus!

HERE IS ALL YOU NEED:

ALMOND MASCARPONE DIP
  • Mascarpone cheese
  • Heavy whipping cream
  • Powdered sugar
  • Almond Extract
EASY CHERRY SAUCE
  • Fresh cherries
  • Granulated sugar

I made this on Sunday, mid-day just as an experimentation for my blog. It turned out way better than I imagined so I asked my husband to come try it. We hadn’t eaten at all yet, so he hesitated because he hates eating sweets on an empty stomach. So we just planned to eat one bite and save the rest for later after lunch or dinner.

Welp, fast forward 10 minutes and we are scraping the bowl clean. We literally ate the entire portion in one sitting and definitely regretted it afterwards. Face, meet palm! This is way too easy to eat. It’s super light and you don’t even realize you’re just shoveling it in by the cup full!

Cherry Almond Mascarpone Dip Recipe

I tried a few different items to pair it with and what made it on the board in my photos were my absolutely favorite. Here is what I used:

    • Sliced almonds
    • Nabisco Chocolate Wafers
    • Fresh cherries
    • Cranberry Almond Biscotti thins (or THINaddictives)
other pairing ideas:
    • Chocolate chunks
    • Pizzelle Italian waffle cookies (I searched high and low to use these for this recipe and they didn’t carry them nearby, ugh!)
    • Chocolate  sugar wafers
    • Nilla wafers
    • Pretzels
    • Graham crackers
    • Chocolate cookie Thins
    • Other fruits; strawberries, blueberries, apple or pear slices (you can even sub for homemade strawberry or blueberry syrup if using those fruits)
    • Jumbo Marshmallows
    • ….also, a glass of a good red wine!

Ingredients 

Almond Mascarpone Dessert Dip

  • 1 1/5 cups heavy whipping cream ideally without carrageenan
  • 6 ounces mascarpone cheese - ROOM TEMP this is 3/4 of an 8oz container, no measuring needed
  • 1/4 cup powdered sugar
  • 1/2 teaspoon almond extract

Easy Cherry Syrup

  • 1 cup cherries stems removed
  • 3 tablespoons granulated sugar additional sugar can be added if you prefer a sweeter syrup Swerve or similar alternate sweetener can be used.

Instructions 

Easy Cherry Syrup

  • In a small saucepan, add whole cherries and sugar over medium heat. Stir to combine so the cherries are coated in sugar. Cook for 5 minutes, stirring occasionally.
  • Once the cherries get softened, mash them as much as possible to release all the juices. Continue to cook until the sugar is dissolved.
  • Remove from the heat and allow to cool in the pan for a few minutes. Strain through a sieve or cheesecloth over a bowl to capture all of the syrup, leaving the solids behind.

Almond Mascarpone Dessert Dip

  • **Be sure the mascarpone is at room temp or it won't mix to a smooth consistency.
  • In a bowl, add the heavy whipping cream and blend until it begins to thicken.
  • Add the almond extract, mascarpone cheese and powdered sugar to the whipping cream. Continue to blend until a smooth, creamy dip forms - careful to prevent over-mixing as it can quickly turn to a butter-like consistency.
  • Plate it creatively with a bunch of fun items for dipping on a board or tray, drizzling the cherry sauce on top just before serving. Or, simply scoop it into a bowl and enjoy. You can also add this atop ice cream!

Notes

* Make sure the mascarpone is at room temperature to ensure a creamy texture
