Move over cookie croissants, this cookie puff pastry is a three ingredient dessert that tastes better than a bakery. Pre-made cookie dough is spread between two layers of puff pastry sheets, then rolled up and baked in a muffin tin until crisp on top and soft in the middle.
These flaky, buttery cookie puff pastries are best enjoyed warm with coffee or tea.

Puff Pastry – a box of frozen puff pastry is used, we use both thawed sheets in this recipe.
Cookie Dough – homemade cookie dough is always elite, but in this recipe pre-made store-bought cookie dough is just fine. I do prefer Toll House over Pillsbury.
Egg – just one egg is mixed with water to spread over the tops of the pastries.
How to Make Cookie Puff Pastry
Roll Out The Puff Pastry
On a clean, surface (lightly floured is ideal), roll out both sheets of puff pastry so they are a bit thinner than it comes, about 1/4 inch. Try to make them match is size.
Add Cookie Dough
Crumble the cookie dough onto the bottom layer of puff pastry. Lightly press it down to cover most of the surface area. Lay on the top layer of puff pastry evenly over the top of the cookie dough.
Assemble
Cut into 9 even strips, about 1-1.25″ inch wide. Roll up like a cinnamon roll and place into a greased muffin pan.
Bake
Brush the tops with egg wash and bake in a preheated oven at 350 degrees for 20-25 minutes, covering the tops with foil near the end to avoid them from browning too quickly.

- 1 - 17.3 oz box frozen puff pastry, thawed 2-sheet box
- 1.5 cups prepared cookie dough I used a tub of toll house
- 1 egg plus 1 tablespoon water
- flour for surface, grease for muffin pan
