Summertime corn is in peak season and there is nothing better we can make then the absolute BEST Street Corn Salad you’ve ever had. Charred corn is combined with jalapenos, cilantro, green onions and chili lime seasoning, cojita cheese, with a touch of mayo for creaminess.

If you’ve been following my blog for some time, you’ll recognize this street corn from my Fried Chicken Street Corn Taco and my Brisket Street Corn Taco. This street corn salad is beloved on tacos, sliders and sandwiches and it’s just as delicious as a standalone side dish.

Key Ingredients

Corn – fresh corn is always best but frozen corn or canned corn can also be used.

Jalapeno – diced fresh jalapeno 

Garlic – fresh garlic is minced finely to add just a hint of garlicky flavor.

Cilantro – fresh and herby cilantro

Green Onions – adds a light oniony flavor without being overpowering.

Lime – both the juice and the zest 

Mayonnaise – the creamy base for this street corn salad

Cojita Cheese – crumbly cheese adds a little decadence 

Seasonings – Tajin and chili powder add a little heat with lots of chili lime flavor. Plus, salt and pepper.

How to Make Street Corn Salad

Step 1: Add olive oil to a large skillet over medium-high heat. Add in the corn and allow it to cook stirring frequently until it starts to char and get some color, about 5-7 minutes. Allow to cool.

Step 2: In a large bowl, add in the mayonnaise, lime juice and lime zest, garlic, tajin and chili powder and salt and pepper. Mix together to make a sauce then add in the corn, cilantro, green onions, jalapeno, and cojita cheese. Mix well until it’s all combined and top with a sprinkling of additional cojita cheese, tajin and chili powder.

What Kind of Corn Can Be Used?

Ideally, fresh corn sliced right off the cob will yield the best flavor and texture for this street corn salad. The next best option is frozen sweet corn followed by canned corn.

Ingredients 

  • 5-6 ears of corn husked and removed from the cob
  • 1/3 cup mayo
  • 1 garlic clove, minced
  • 1 lime, juiced and zested
  • 1/3 cup sliced scallions
  • 1/3 cup grated cojita cheese
  • 1/4 cup cilantro, minced
  • 1 jalapeno, diced
  • 1/2-1 tsp chili powder
  • 1/2-1 tsp Tajin
  • 1/4 tsp salt
  • 2 tablespoons olive oil

Instructions
