Thinly sliced cucumbers and tender shredded chicken are tossed in our easy, homemade peanut sauce, consisting of pantry staples like peanut butter, vinegar, soy sauce, sesame oil, lime, honey, and garlic. Then we drizzle over chili crisp, add scallions and toasted sesame seeds, and you have one incredibly flavorful meal that’s also low in calories and carbs.
Key Ingredients
This yummy Thai cucumber salad is full of fresh veggies and aromatics, and the dressing is mainly pantry staples, making this such a low-maintenance and easy ingredient list:
Shredded Chicken – rotisserie chicken is always the easiest option when it comes to chicken salad recipes. However, you can also poach your chicken.
Cucumbers – select firm English cucumbers for this recipe (the ones wrapped in plastic).
Peanut Sauce – a combination of peanut butter, soy sauce, lime juice, rice wine vinegar, water, honey, sesame oil, and fresh garlic.
Chili Crisp – this is truly the star of the recipe. Select your favorite like Fly by Jing or Momofuku.
Green Onions – sliced scallions add a mild onion flavor.
Sesame Seeds – toasted sesame seeds are ideal. We add them to the sauce and use them as a garnish on top.
How to Make Thai Cucumber Salad
Use a mandolin or a sharp kitchen knife to slice the cucumbers into uniform, thin slices. Lay them in a single layer in between paper towels, roll them up, and set aside to remove excess moisture for a few minutes.
In a large bowl, add in all the peanut sauce ingredients. Whisk together until smooth. Add the cucumbers, chicken, and green onions, and toss to coat in the sauce until they are well-coated. Garnish with green onions, sesame seeds, and drizzles of chili crisp.
Tips and Modifications
- Using a mandolin is the easiest way to slice the cucumbers in a consistent and uniform shape.
- To prevent the cucumbers from getting soggy, lay the sliced cucumbers in a single layer between paper towels. Roll them up and set them aside for 10 minutes while you prepare the sauce.
- Peanut allergy? Swap the peanut butter for sunflower butter.
How to Store Thai Cucumber Chicken Salad

- 2 teaspoons toasted sesame oil

- 1 clove garlic minced
- 1-2 tablespoons water or coconut milk if needed
- 2 teaspoons toasted sesame seeds
