This recipe has juicy chicken, tender rice and all bakes in a super flavorful white-wine broth. This garlic parmesan chicken rice casserole is a complete hearty dinner that warms the soul.

Garlic Parmesan Chicken Rice Casserole

This delicious and comfy chicken rice casserole uses a dump-and-bake method, meaning there is minimal prep work. We use either rotisserie chicken or cooked chicken chunks and toss all the ingredients into one pan and toss it in the oven.

I’ve made a lot of other one-pan meals like my Orzo Tuscan Chicken Bake, Marry Me Chicken Pasta, or my Monterey Chicken One Pan Orzo. But this casserole may just take the spot of #1 on my list.

It’s full of fresh garlic, lots of parmesan, and Monterey jack cheese, and we use Knorr flavored rice, which adds that “warm hug” element to this dish. The white wine cooks off but still leaves behind a great amount of tanginess and enriches the flavor.

Key Ingredients

These easy ingredients highlight how low-maintenance this recipe is for a quick weeknight dinner. It’s even better reheated the next day when the flavors continue to meld together.

Chicken – I use either cooked rotisserie chicken (shredded or diced into chunks). You can also sear up some chicken or use leftover cooked chicken you may have in the fridge (like leftover Chicken Shawarma is perfect).

Rice – I used two bags (5.4 oz) of the Knorr Chicken Flavor Rice Sides or the Herb & Butter Rice Sides.

Chicken Stock – or use chicken bouillon and water.

White Wine – use a dry white wine (pinot grigio, sauv blanc, etc.) that’s good enough to drink.

Cheese – grated parmesan cheese and shredded Monterey jack cheese.

Garlic – freshly minced garlic is the only prep work involved. It’s worth all the effort 🙂

Butter – just a few tablespoons kick up that warm and cozy flavor and who doesn’t want a little butter with your rice?

How to Make Chicken Rice Casserole

Preheat the oven to 375 degrees. 

Into a greased 9×13 casserole dish add in all of the ingredients, using a whisk to ensure the ingredients are evenly distributed. 

Bake uncovered for 30-40 minutes, or until most the liquid is absorbed into the rice. Remove from the oven and let it rest for 10 minutes to allow the remaining moisture to be absorbed.

Sprinkle with extra parmesan cheese if desired, and serve.

Ingredients 

  • 2 – 5.4 oz bags Knorr Creamy Chicken Flavored Rice or Herb & Butter Rice
  • 2 cups rotisserie or cooked chicken diced or shredded
  • 3.5 cups chicken stock or hot water + 1 heaping tablespoon of granulated bouillon
  • 2/3 cup white wine
  • 2/3 cup grated parmesan cheese plus more for topping
  • 5 garlic cloves minced
  • 4 tablespoons salted butter melted
  • 1-2 teaspoons red pepper flakes
  • 1.5 cups Monterey Jack cheese
  • 1/2 tsp each: salt and pepper

Instructions 

  • Preheat the oven to 375 degrees.
