Easy taco lasagna is 5-ingredient recipe with layers of tender seasoned ground beef, beans, and melty cheese between flour tortillas. This easy recipe is perfect for weeknight meals, perfect for meal prepping the week ahead or to freeze for future use as it reheats perfectly.

Taco lasagna is so versatile! You can add your favorite toppings like sour cream, salsa, lettuce, olives, etc. Or add extra filling ingredients like diced onions and peppers, diced green chilies, etc. 

Why You’ll Love Taco Lasagna 

– Super easy. seriously, this is one of the easiest dinner recipes that I know. It takes less than 10 minutes to assemble and just 25 minutes to bake. All you have to exert energy doing is browning the beef. Everything else is dump-and-go. 

– Customizable. Taco lasagna is such a straightforward recipe and one that takes ingredients you likely have in your kitchen. This recipe is for the base a simplified taco lasagna but you can certainly swap in/out the ingredients you prefer like diced onions and peppers, green chilies, corn, taco sauce, etc. Plus, you can add all the toppings of your choice to really dress this up. 

– Kid-friendly. This is such a great recipe for the whole family because kids love this just as much as adults. It is a fun way to serve tacos for a whole crowd and everyone can add the toppings of their choice.

Key Ingredients

  • Flour tortillas – you can use whatever flour tortillas you have on-hand. Taco sizes or burrito sized works, you may just need to tear them to fit in the pan in order to create an even layer. 
  • Ground beef – 1.5-2 lbs of ground beef is used. I typically use an 85/15. 
  • Taco seasoning (1 oz packet) – pre-made is easiest but you can also make a homemade taco seasoning.
  • Beans  (15 oz can)- use your preferred beans, either black beans, pinto beans, or even spread on refried beans.
  • Shredded cheeses – I used a mexican shredded cheese blend but I’ve also used cheddar and pepperjack. Whatever melty cheeses you prefer or have in your fridge will do.

How to Make Taco Lasagna 

This taco lasagna couldn’t be easier to make. Here are the simple instructions:

Step 1: Pre-heat oven to 375 degrees. In a large skillet over medium heat, add in the ground beef and brown on both sides, using a spatula to break up the beef as it cooks to turn it into small crumbles. As it is cooking, add in one packet of taco seasoning. Once there isn’t much pink left, turn off the heat.

Step 2: Spray a 9×13 casserole dish with non-stick spray. Lay flour tortillas on the bottom, creating an even base layer. You may need to rip the tortillas in half for the sides of the pan.

Step 3: Add half of the ground beef using a slotted spoon to strain the excess grease. Scatter it evenly among the base layer of tortillas at the bottom of the pan. Add in half the pan of strained beans, then sprinkle on 1/3 of the shredded cheese.

Step 4: Repeat with another layer of flour tortillas, the remaining beef, beans, and another 1/3 of the cheese. 

Step 5: To finish off the layers, add one last layer of tortillas and the remaining cheese on top. 

Step 6: Bake for 25 minutes or until cheese is fully melted. Slice into serving sizes and add the toppings of your choice.

How to Freeze and Store Leftovers

This dish will last in the fridge for up to 3 days, as long as you store it in an airtight container. To freeze, simply place each portion size into a vacuum sealed bags or wrap each serving tightly in a few layers or cling wrap and then into a freezer zip-top bag.
