Cinnamon Sugar popcorn

I used to buy this  bag of cinnamon-sugar popcorn in the organic section at Kroger. I forgot the brand name but it was THE BEST. I would buy it almost weekly and you’d want to eat the whole bag in one sitting. It’s since been discontinued and I’ve never seen that brand again, so sad.

I often yearn for this popcorn and it’s been a few years since I had it. I think that combination of salty butter mixed with cinnamon sugar reminds me of good ole cinnamon toast, which is one of my favorite treats of all times (though  I never think to make it)! After seeing someone eating Stacy’s cinnamon sugar pita chips at work, I was reminded of my brief love affair with this  popcorn and how long it’s been since I’ve had it.

So, last night I decided to see if I could make a version that would come close to the flavor. Well, I am happy to report that this is pretty dang satisfying! I told myself I was just going to have a few bites because it was just really an experiment… Hmm ok. Half the bowl later…it’s just too good to stop eating ๐Ÿ™‚

Cinnamon Sugar Popcorn

Ingredients

  • 1/2 cup Popping corn kernels
  • 1/3 cup Butter, salted
  • 2/3 cups Sugar
  • 1 tablespoon Cinnamon
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Sea salt

Directions

Make the popcorn using an air popper according to the manufacturers directions. Or, make it on the stove top with a few tablespoons of oil.
While the popcorn is popping, melt the butter in a bowl. Then add the vanilla extract and combine. Pour the butter mixture all over the popcorn to coat thoroughly, stirring as you pour.
Add the dry ingredients (salt, sugar, cinnamon) in a small bowl and combine. Using a spoon, sprinkle spoonfuls of the dry mixture over the buttered popcorn - tossing the popcorn as you go to get an even coat. Add more butter or cinnamon/sugar if needed based on your preference.
