Biscuits and Gravy Casserole with Sausage, Egg, and Cheese!

A complete breakfast in one pan is the kind of meal we all seek when serving a crowd and want to keep our sanity without being in the kitchen for hours. This biscuits and gravy casserole is a great solution for any occasion.

Ingredients You’ll Need

Biscuits – a tube of premade biscuits will save you time and acts as the flaky, buttery base of this breakfast casserole.

Eggs + Half and Half – the creamy egg mixture brings the casserole together and settles at the bottom of the dish to create a fluffy egg layer.

Cheese – Colby Jack combines sharp cheddar and Monterey Jack. A slight sharpness meets perfect meltability.

Sausage – not only does crumbled breakfast sausage add protein and heartiness, but it also adds savory flavor to the gravy. I prefer the maple-flavored breakfast sausage for a subtle hint of sweetness.

Gravy – butter, flour and milk are added to the sausage drippings to create the homemade gravy. The gravy adds moisture to keep the dish (especially the biscuits) from drying out and imparts the nostalgic taste we crave with sausage and biscuits.

Seasonings – a combination of salt, pepper, and Cajun seasoning is used to flavor up the gravy and the egg mixture that gets poured over every inch of the casserole.

How to Make Biscuits and Gravy Casserole

This recipe is super easy to make. We’ll just brown the sausage and make this simple gravy. Then the rest is just layering ingredients into a casserole dish and baking in the oven.

To make this casserole, we’ll combine eggs, half-and-half, salt, and pepper in a medium bowl.

Next, cook the sausage in a pan and break it into small bits as it cooks. Set it aside, leaving the drippings behind in the pan. Add butter and flour to make a roux, then slowly whisk in the milk. Season liberally with salt and pepper until the gravy is delicious.

Add the biscuits to the bottom of a 9×13 greased pan, pressing them out so they mostly cover the bottom. Top it with sausage, then a layer of cheese, and pour the egg mixture evenly over the top.

Finally, pour the gravy evenly over everything and bake for 35-40 minutes. It’s done when the top is golden brown and the eggs are cooked through (tested with a toothpick). Let it rest for a few minutes before slicing and serving with a drizzle of pancake syrup.

Ingredients 

  • 1 lb. ground pork sausage maple flavor preferred
  • 3 tablespoons butter plus more for greasing the casserole dish
  • 1/4 cup flour
  • 2 cups milk
  • 2 tsp cajun seasoning see notes for my homemade blend
  • salt and pepper to taste
  • 8- count flaky layers biscuits 16 oz tube (like Pillsbury Grands)
  • 2 cups colby jack cheese shredded
  • 6 large eggs
  • 1/2 cup half and half
  • ½ tsp cracked pepper
  • ¼ tsp salt
  • pancake or maple syrup for serving

Instructions 

  • Preheat your oven to 350°F. Lightly grease a 9×13 inch baking dish with butter.
  • Start by cooking the sausage in a pan over medium-low heat, crumbling the sausage as it browns. Once cooked through, set it aside and leave the drippings in the pan.
  • Melt the butter in the pan then sprinkle over flour and whisk allowing it to cook for about 1 minute. Gradually add the milk, whisking as you pour until the gravy comes together. Scrape up the brown bits from the bottom of the pan.
  • Add cajun seasoning and liberally with salt and pepper (gravy needs plenty of seasoning to be delicious). Taste and adjust as needed.
  • To assemble the casserole, add the biscuits to the bottom of the pan pressing them a few times until they cover most of surface layer of the pan.
  • Scatter the sausage over the biscuits and top with the shredded cheese.
  • In a medium bowl, whisk together the eggs, half and half, salt, and pepper. Pour this mixture evenly over the biscuits and sausage, edge to edge.
  • Pour the gravy over the top of the entire casserole. Place in the oven and bake for 35–45 minutes. The casserole is done when the casserole has puffed up and is golden brown on top.
  • Let it rest for a few minutes before slicing and serving. It’s best enjoyed warm with a drizzle of pancake syrup.

Notes

If the top of the casserole browns too quickly before the eggs have time to set, simply cover the top with foil as it finishes baking.
My homemade Cajun seasoning:
2 tablespoons mild paprika
2 teaspoons salt
3 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons chili powder, add more if you like heat
1.5 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon brown sugar
1.5 teaspoon cayenne pepper, add more if you like heat
1/2 teaspoon cracked pepper
