Biscuits and Gravy Casserole

This biscuits and gravy casserole is an easy breakfast casserole that serves a crowd. It's layered with prepared biscuits, crumbled sausage, shredded cheese, eggs, and topped with delicious scratch-made gravy. Top it with a drizzle of syrup for the perfect breakfast for Sunday mornings, Christmas, Easter, church potlucks, and more!

Ingredients

  • 1 lb. ground pork sausage maple flavor preferred
  • 3 tablespoons butter plus more for greasing the casserole dish
  • 1/4 cup flour
  • 2 cups milk
  • 2 tsp cajun seasoning see notes for my homemade blend
  • salt and pepper to taste
  • 8- count flaky layers biscuits 16 oz tube (like Pillsbury Grands)
  • 2 cups colby jack cheese shredded
  • 6 large eggs
  • 1/2 cup half and half
  • ½ tsp cracked pepper
  • ¼ tsp salt
  • pancake or maple syrup for serving

Instructions

  • Preheat your oven to 350°F. Lightly grease a 9x13 inch baking dish with butter.
  • Start by cooking the sausage in a pan over medium-low heat, crumbling the sausage as it browns. Once cooked through, set it aside and leave the drippings in the pan.
  • Melt the butter in the pan then sprinkle over flour and whisk allowing it to cook for about 1 minute. Gradually add the milk, whisking as you pour until the gravy comes together. Scrape up the brown bits from the bottom of the pan.
  • Add cajun seasoning and liberally with salt and pepper (gravy needs plenty of seasoning to be delicious). Taste and adjust as needed.
  • To assemble the casserole, add the biscuits to the bottom of the pan pressing them a few times until they cover most of surface layer of the pan.
  • Scatter the sausage over the biscuits and top with the shredded cheese.
  • In a medium bowl, whisk together the eggs, half and half, salt, and pepper. Pour this mixture evenly over the biscuits and sausage, edge to edge.
  • Pour the gravy over the top of the entire casserole. Place in the oven and bake for 35–45 minutes. The casserole is done when the casserole has puffed up and is golden brown on top.
  • Let it rest for a few minutes before slicing and serving. It's best enjoyed warm with a drizzle of pancake syrup.

Notes

If the top of the casserole browns too quickly before the eggs have time to set, simply cover the top with foil as it finishes baking.
My homemade Cajun seasoning:
2 tablespoons mild paprika
2 teaspoons salt
3 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons chili powder, add more if you like heat
1.5 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon brown sugar
1.5 teaspoon cayenne pepper, add more if you like heat
1/2 teaspoon cracked pepper
