Fluffy High Protein Low Carb Pancakes with blueberriesOK, I am really excited about this creation. I am always making high protein concoctions for my *fiance*, Laron. Since pancakes (and any breakfast food really) are his favorite, pancakes are high on his “please figure out how to make a healthy protein packed version so I can eat it and not feel guilty” list. So I really just winged this recipe until the texture felt right. There wasn’t a lot of science and practice behind this one. But I kept track of what I was doing and posted the recipe below. Him and I both agree, this is as close to a “regular” pancake as we have ever found. And since it’s made with Bob’s Red Mill Low Carb Baking Mix, it’s high in fiber and super hearty. So this will keep you full just like oatmeal. They are so moist and flavorful, no butter or syrup is needed – but I’ll leave that up to you! ๐Ÿ™‚

WE ARE ENGAGED!!! And with our wedding coming up in just seven quick months, we are both determined to go into our marriage feeling healthier, more fit and FINALLY making this a way of life instead of a good few months then we fall off the wagon. So this time around, I am determined to master this healthy way of life.

Since the proposal in late June, I’ve officially lost 19 pounds!!! That’s us last week. I think you can really notice in my face for sure.

From what I realized, I have to be super real with myself about why I always go back to my old ways after losing weight. I’ve identified my problems and listed my solution/self-talk when I start to revert back. People say don’t do fad diets because you bounce right back to your old ways after you lose weight. And I agree with this. But I think there are so many other factors to focus on besides that. Here are the two main problems I’ve identified about myself and I think I speak for a lot of others:

  • Laziness – Hmm go to the gym or sit and chill after working 9+ hours? Or vice versa, wake up extra early when I can get another two hours of sleep before going to work?? The answer seems so simple – take the easy route!
    • Mental Self Talk-Down – No. No. No. Don’t do something just because it’s easy. What kind of person does that make you? Successful people aren’t lazy people. Do you want to look and feel good? Do you want all your past weeks and months of hard work be in vain? Once you go to the gym you will be so much happier. You’ve never left the gym with regrets.
  • Temptation – I’m sorry, there is no such thing as giving up carbs or sugar for me. I simply can’t do it. What kind of life is that anyway?
    • Solution – Spend the time to create food that FEELS like cheat food but really isn’t (like cauliflower rice/mashed, zucchini noodles, low carb/low sugar baked goods). And give in to your temptation in tiny amounts. I’ve been going really steady at my diet the past two months and that still included two mini Reeces Peanut Butter Cups or mini Twix just about every day. In the scheme of you healthy lifestyle, the reality is that a little sweet treat isn’t going to hinder you.

Anyways, I think it’s important to still eat food that makes you happy, but just find a way for it to be a bit smarter.

These pancakes are such an easy recipe to make and I think you will be very happy to have found these – whether you are trying to eat healthy or not!

When I put them on the stove with coconut oil, I like the put the heat on medium so they can get a nice crispness. This is the way we love to eat all pancakes, but of course, cooking lower and slower will give you a standard and non-crisp pancake and less of a burnt color.

We made these pancakes with blueberries, but you could keep them plain or use any mix-ins that you like, such as bananas, strawberries, chocolate chips, peanut butter, etc.

Ingredients

  • 1/2 cup Low Carb Baking Mix (Bob's Red Mill)
  • 1 teaspoon Baking powder
  • 2 tablespoons Xylitol sugar crystals
  • 1/4 cup Egg white protein (or protein of your choice)
  • 1/2 teaspoon Sea salt
  • 2 Eggs
  • 1 cup Nonfat plain Greek yogurt
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Almond extract
  • 2 tablespoons Unrefined coconut oil
  • 1/2 cup Blueberries (optional)

Directions

Combine all dry ingredients (first five above) into a mixing bowl, stir to combine
Add Greek yogurt and mix until you get a thick paste like texture
In a small bowl, whisk eggs until smooth. Add the extracts and whisk combine.
Add the eggs/extracts mixture to the mixing bowl. Whisk to combine until there are no lumps
Heat a nonstick skillet over medium heat. Add the coconut oil, then pour pancake batter (about 1/3 cup each) into the skillet. After you begin to see bubbles form, flip over and cook for another 1-2 minutes.
