With a Greek yogurt dressing and lots of chicken, this is perfect if you desire a lower carb, high protein watching your carbs.

Street Corn Creamy Cucumber Salad
This easy 15-minute recipe is super simple and only requires chopping up some ingredients, making a simple dressing, and throwing it all together in a bowl.
The dressing is a Greek yogurt base that’s tangy and full of flavor from the fresh lime juice and zest, garlic, chili powder, and cumin.
This street corn chicken cucumber salad is also super versatile and can be adjusted to your liking. Add avocado, black beans, bacon, etc.
Key Ingredients
This yummy chicken creamy cucumber salad is full of fresh veggies and aromatics, and the dressing is mainly fridge and pantry staples, making this such a low-maintenance and easy ingredient list:
Rotisserie Chicken – I love this shortcut because it saves you a step not having to cook chicken. Of course, you can always poach your own chicken breasts instead.
Cucumbers – English cucumbers are the BEST! These are the long cucumbers wrapped in plastic in your produce section.
Peppers – we’ll use fresh jalapeno pepper and red bell pepper. Both seeded and diced.
Aromatics – cilantro, red onion, green onion, and garlic are all used.
Corn – I’ve found that canned corn tastes best in this creamy cucumber salad recipe. You can also
Dressing – Greek yogurt, mayo, lime, chili powder, cumin, paprika, salt and pepper.
How to Make Street Corn Creamy Cucumber Salad
- Dry out the cucumbers by layering them in between sheets of paper towels while you prepare the other ingredients.
- In a medium bowl combine all the dressing ingredients. Whisk until smooth, taste, and adjust the seasonings to your liking.
- To a large mixing bowl, add cucumbers, corn, chicken, and all the remaining ingredients.
- Pour most of the dressing over everything and use a spatula to mix until all ingredients are evenly coated. Use the remaining dressing if needed depending on your preference.

Street Corn Creamy Cucumber Salad
Ingredients
- 1 1/2 english cucumbers halved and sliced (about 3 cups)
- 2 cups rotisserie chicken chopped
- 1/4 cup cilantro minced
- 3 green onions sliced
- 1 jalapeno seeded and diced
- 1/4 red onion diced
- 1/2 red bell pepper seeded and diced
- 15.25 oz can sweet corn drained
Dressing
- 1/2 cup plain greek yogurt 2% or higher for creaminess
- 1/3 cup mayonnaise
- 1 lime, juice and zest of
- 1 clove garlic finely minced or grated
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp each salt and freshly cracked pepper
Instructions
- Lay the cucumber slices in a single layer on paper towels then add another layer of paper towels on top, pressing it into the cucumbers to absorb the moisture. Leave them to dry under the paper towels while you prep the rest of the ingredients.
- In a medium bowl combine greek yogurt, mayo, garlic, lime juice and zest, seasonings and salt and pepper. Whisk until smooth, taste and adjust the seasonings to your liking. Sometimes I’ll add a little more cumin or chili powder if needed.
- To a large mixing bowl add cucumbers, corn, chicken, and all the remaining ingredients.
- Pour most of the dressing over everything and use a spatula to mix until all ingredients are evenly coated. Use the remaining dressing if needed based on your preference. Serve chilled and store in the fridge in a tightly sealed container.
