This slow cooker version of Marry Me Tortellini is an easy to make pasta dinner smothered in a decadent sun-dried tomato cream sauce filled with herbaceous basil and tender chicken. It’s sure to make your love interest swoon!

Key Ingredients

This straight forward ingredient list is full of items you may already have in your kitchen. Be sure to review the recipe card for measurements.

Chicken – breasts or cutlets

Tortellini – fresh or refrigerated, if frozen thaw first. Select one with a complimentary filling like 4-cheese, Italian sausage, chicken + roasted garlic, etc.

Garlic – freshly minced garlic. No jars or tubes compare to the real thing!

Onions – a half an onion adds the aromatics.

Sundried tomatoes – a whole jar of drained julienned sundried tomatoes imparts a mildy sweet tang.

Chicken stock – mixed with a little cornstarch to help thicken the base of the sauce.

Heavy cream – adds the decadent creaminess to the sauce.

Parmesan – freshly grated is always best for maximum flavor and no fillers.

Seasonings – Italian seasoning, cajun seasoning, and salt and pepper.

Butter – just 2 tablespoons and 1 tablespoon of olive oil if you are able to sauté the chicken in your slow cooker.

Basil – fresh basil leaves are a staple of marry me pasta!

How to Make Marry Me Tortellini

Sauté the Chicken

If you have a sauté function on your slow cooker: add in butter and oil over “high” on sauté. Brown your chicken for 2 minutes per side. Scoot the chicken to the side and add in the onion and garlic to sauté until fragrant, about 1 minute.

If you don’t have a sauté function just add in the seasoned raw chicken, onion and garlic.

Add the Ingredients to Slow Cooker

Pour in the chicken stock, heavy cream, seasonings, and sun-dried tomatoes over the chicken. 

Set it and Forget it

Cover and use the slow cook function on High for 3 hours. At this point, the chicken should shred with no resistance. Use two forks to shred it inside the pot. Stir in the parmesan into the sauce and chicken mixture. Add in the tortellini, submerging it into the liquid. Cover and continue to cook another 15 minutes or until the tortellini is tender.

 Finishing Touch

Stir in the fresh basil leaves. Turn to the “keep warm” function while serving. Garnish each bowl with additional parmesan if desired.

Skillet Preparation for Marry Me Tortellini

Looking to make this in a skillet instead of a slow cooker? Just follow these steps:

  • In a large skillet, add butter and olive oil over medium heat. Add in seasoned chicken and cook through, about 3-4 minutes per side. Set aside chicken.
  • Add in the onion and garlic, saute until fragrant. Add in the sun-dried tomatoes and seasonings. 
  • Pour in the chicken stock + 1 tbsp cornstarch and cream and bring to a low simmering boil, allowing it to thicken. Stir in the parmesan.
  • Add in the tortellini and cook uncovered about 5-7 minutes or until tortellini is tender.

Ingredients 

  • 1.5 lbs chicken breasts
  • 18 oz tortellini, fresh or refrigerated, if frozen thaw first Select a complimentary filling like 4-cheese, italian sausage, etc.
  • 2 teaspoons Italian seasoning plus more for seasoning chicken
  • 1 teaspoon cajun seasoning plus more for seasoning chicken
  • 4 garlic cloves, minced
  • 1/2 medium onion, diced
  • 1-8.5 oz jar sun-dried tomatoes julienne
  • 2 cups chicken stock
  • 2 tablespoons cornstarch whisked into the chicken stock
  • 1 cup heavy cream
  • 2/3 cup freshly grated parmesan
  • 1 oz fresh basil leaves
  • salt and pepper to taste
  • 2 tablespoons butter
  • 1 tablespoon olive oil

Instructions 

  • Pound chicken to an even thickness and season liberally with a combination of cajun seasoning and Italian seasoning.

If your slow cooker has a saute function (if not skip to step #2)

  • Add in butter and oil over โ€œhighโ€ on sautรฉ. Brown your chicken for 2 minutes per side. Scoot the chicken to the side and add in the onion and garlic to sautรฉ until fragrant, about 1 minute.
  • If you donโ€™t have a sautรฉ function just add in the seasoned raw chicken, onion and garlic (omit the butter and olive oil).
  • Pour in the chicken stock + cornstarch mixture, heavy cream, seasonings, and sun-dried tomatoes over the chicken.
  • Cover and use the slow cook function on High for 3 hours.
  • At this point, the chicken should shred with no resistance. Use two forks to shred it inside the pot.
  • Stir in the parmesan. Add in the tortellini, submerging it into the liquid. Cover and continue to cook another 15 minutes or until the tortellini is tender.
  • Toss in the fresh basil leaves and stir to incorporate. Turn to the โ€œkeep warmโ€ function while serving. Garnish each bowl with additional parmesan if desired.

    Absolutely deliciousโ€ฆ I didnโ€™t read the entire website or the first time I made it. I did not drain the sun-dried tomatoes, but it was still fineโ€ฆ I have made this numerous times and my husband loves it. He shared with his coworkers once and now they always ask when Iโ€™m making it. Super easy Iโ€™m actually making it now while writing this review.

    This is SO good! One of my fiancรฉs favorite meals I have made. It was rich, but not too rich. It was flavorful, filling, and delicious. I used spinach and cheese tortellini.
