In a mixing bowl, cream together butter and brown sugar until light and fluffy. Add eggs, one at a time. Mixing to combine. Add the honey (spray measuring cup with nonstick spray before measuring honey). Then add vanilla and mix until smooth. Add flour and baking soda and mix until just combined.
||Turn out dough on cookie sheet. Use offset spatula spread dough until it's smooth and evenly distributed. |
Bake for 15-18 minutes. Remove from the oven (dough will still be undercooked but will continue to cook during next processes). Pour 1 1/2 cups of the chocolate chips onto the dough. Return to the oven for 2-4 minutes, until the chips are softened. Spread the chocolate across the cookie using the offset spatula.
||Switch the oven to Broil. Add the marshmallows onto the chocolate layer, covering fully. Broil for a 2-4 minutes, until nice a toasty brown on top. Watch them carefully to prevent overcooking. |
||Sprinkle the top of the toasted marshmallows with the chopped Golden Grahams, pressing them down into the sticky marshmallows slightly. Melt the remaining 1/2 cup of chocolate chips in the microwave for 30 seconds. Using a spoon, drizzle melted chocolate over the top of the finished cookie. Serve warm! |
