Fluffy and hearty pancakes that are actually good for you!
1/2 cup Low Carb Baking Mix (Bob's Red Mill)
1 teaspoon Baking powder
2 tablespoons Xylitol sugar crystals
1/4 cup Egg white protein (or protein of your choice)
1/2 teaspoon Sea salt
1 cup Nonfat plain Greek yogurt
2 teaspoons Vanilla extract
1 teaspoon Almond extract
2 tablespoons Unrefined coconut oil
1/2 cup Blueberries (optional)
Combine all dry ingredients (first five above) into a mixing bowl, stir to combine
Add Greek yogurt and mix until you get a thick paste like texture
In a small bowl, whisk eggs until smooth. Add the extracts and whisk combine.
Add the eggs/extracts mixture to the mixing bowl. Whisk to combine until there are no lumps
Heat a nonstick skillet over medium heat. Add the coconut oil, then pour pancake batter (about 1/3 cup each) into the skillet. After you begin to see bubbles form, flip over and cook for another 1-2 minutes.
