Fluffy and hearty pancakes that are actually good for you!
Ingredients
- 1/2 cup Low Carb Baking Mix (Bob's Red Mill)
- 1 teaspoon Baking powder
- 2 tablespoons Xylitol sugar crystals
- 1/4 cup Egg white protein (or protein of your choice)
- 1/2 teaspoon Sea salt
- 2 Eggs
- 1 cup Nonfat plain Greek yogurt
- 2 teaspoons Vanilla extract
- 1 teaspoon Almond extract
- 2 tablespoons Unrefined coconut oil
- 1/2 cup Blueberries (optional)
Directions
Combine all dry ingredients (first five above) into a mixing bowl, stir to combine | |
Add Greek yogurt and mix until you get a thick paste like texture | |
In a small bowl, whisk eggs until smooth. Add the extracts and whisk combine. | |
Add the eggs/extracts mixture to the mixing bowl. Whisk to combine until there are no lumps | |
Heat a nonstick skillet over medium heat. Add the coconut oil, then pour pancake batter (about 1/3 cup each) into the skillet. After you begin to see bubbles form, flip over and cook for another 1-2 minutes. |
