It’s giving all the vibes of buffalo chicken wings in this lightened up, low carb, high protein lunch. If you love chicken salad, you know a lot of recipes are pretty fattening even if they are low carb. In this chicken salad recipe, it’s guiltless and wholesome!

For dipping, cucumber rounds or celery sticks provide the perfect crisp and crunchy vessel. Or you can always use tortilla chips which pair perfectly with the flavors and texture of the chicken salad.

Key Ingredients

We use such simple ingredients for this recipe, you’ll probably only need to grab a few items if you have the pantry and fridge staples. (Be sure to see the recipe card below for measurements).

Rotisserie Chicken – white and/or dark meat. Alternately you can also boil chicken tenders or breasts and shred.

Buffalo Sauce – I used Frank’s wing sauce for my chicken salad.

Greek Yogurt – I recommend 2% or higher for more creaminess. Plain yogurt of course.

Light Mayo – an avocado oil or olive oil mayo works great. We just need a little and yes, regular mayo is just fine.

Ranch Seasoning – powdered ranch such as Hidden Valley.

Celery – I use diced up celery for a subtle crunch.

Red & Green Onion – a combination of red onion and green onions offer lots of flavor.

Blue Cheese Crumbles – skip if you’re not a blue cheese person but you could also use feta or shredded cheddar.

How to Make Buffalo Chicken Salad

As far as chicken salad recipes go, it just doesn’t get any easier. Not only does it only take 10 minutes to throw together, it’s ridiculously delish and makes the perfect meal prep for the week.

  1. Into a mixing bowl, add the shredded chicken, diced celery, red onions, green onions and blue cheese.
  2. Into the same bowl add in the greek yogurt, mayo, buffalo sauce and ranch seasoning and salt and pepper.
  3. Stir everything together until it’s evenly combined. Taste and adjust if needed (sometimes I’ll add a little more buffalo sauce, more ranch powder, etc).

What To Serve with Buffalo Chicken Salad?

The best way to eat chicken salad is with cucumber rounds or spears, celery spears, tortilla chips or crackers. Chicken salad is typically a complete meal on it’s own, but you can also enjoy it with a side of fresh fruit or if you use it to fill a sandwich, you can serve it with chips.

Ingredients 

  • 2 cups rotisserie chicken shredded
  • 1/3 cup buffalo wing sauce
  • 1/3 cup greek yogurt
  • 2 tablespoons light mayo
  • 1 tablespoon ranch seasoning
  • 1/4 cup celery diced
  • 1/4 cup red onion diced
  • 1/4 cup green onion diced
  • 2 tablespoons blue cheese crumbles or feta or shredded cheddar can be used instead
  • salt and pepper to taste
