Behind This Steak and Potato Bake Recipe

There’s something about steak and potatoes that just always works. It’s classic, comforting, and always feels like a full, satisfying meal.

This version takes that combination and turns it into something even better. Instead of serving them side by side, the potatoes serve as the base of the dish, baked until fluffy, then loaded with creamy sauce, steak bites, and melted cheese.

The Cajun alfredo sauce brings everything together. It’s rich, slightly spiced, and coats the steak and potatoes, making every bite feel indulgent. It’s the kind of meal that feels like it should be reserved for a special occasion, but is simple enough to make at home.

Tips From My Kitchen

  • Don’t poke the potatoes. This helps them stay fluffy inside instead of drying out.
  • Let the steak sear undisturbed. This creates that golden crust.
  • Use a high smoke point oil. Avocado oil works best for searing steak.
  • Lift and drop the potatoes. This loosens the inside and makes them extra fluffy.
  • Broil at the end. This gives the cheese that bubbly, golden finish.

Ingredients You’ll Need & Why

Grab these ingredients to create the rich layers of this creamy, decadent steak and potato bake.

Russet potatoes – Bake up fluffy inside and sturdy enough to hold all the toppings.

Steak (sirloin or ribeye) – Cut into bite-sized pieces for quick cooking and even distribution.

Cajun seasoning – Adds a bold, slightly spicy flavor to both the steak and sauce.

Butter and garlic – Create a rich base that enhances both the steak and the sauce.

Half-and-half + heavy cream – Combine to make a creamy, velvety Alfredo-style sauce.

Parmesan cheese – Thickens the sauce and adds saltiness and a savory, nutty flavor.

Sharp white cheddar cheese – Melts in between the layers and over the top of the potatoes for a cheesy baked finish and a sharp flavor.

How to Make Steak and Potato Bake

Bake the Potatoes

Start by rubbing the potatoes with avocado oil and sprinkling them generously with salt.

As they bake, the skins will become slightly crisp while the inside turns soft and fluffy. You’ll know they’re ready when a fork slides easily through the center.

Sear the Steak Bites

Toss the steak pieces in avocado oil and Cajun seasoning until fully coated.

When the steak hits the hot pan, you should hear a strong sizzle. Let it cook undisturbed until a golden crust forms on one side, then flip (you’ll only flip once to ensure a crust forms on each side).

Once flipped, cook briefly, then lower the heat and add butter and garlic. As the butter melts, spoon and toss the steak so it gets coated in that garlicky richness.

Remove the steak and cover loosely to keep it warm and juicy.

Make the Cajun Alfredo Sauce

In the same pan, add butter, half and half, and heavy cream.

As it heats, the sauce will begin to gently bubble. Whisk frequently to keep it smooth, then stir in Parmesan cheese.

The sauce should thicken into a creamy consistency that coats the back of a spoon. It will continue to thicken slightly as it sits.

Fluff the Potatoes

Once the potatoes are done baking, lift each one slightly and drop it back onto the pan.

This loosens the inside and creates that soft, fluffy texture.

Place the potatoes into a baking dish, then slice open and use a fork to gently fluff the inside, creating space for the filling.

Build the Layers

Spread butter into the fluffy potato and season with pepper.

Spoon the creamy alfredo sauce into each potato, letting it soak into the center.

Add a layer of cheddar cheese, followed by the steak bites, then drizzle more sauce over the top.

Finish with another generous layer of white cheddar cheese.

Bake Until Bubbly & Serve

Return the loaded potatoes to the oven and bake until the cheese is melted and bubbling around the edges.

For extra color and texture, broil briefly until the top becomes golden and slightly crisp.

Top with fresh parsley and serve hot. Each bite should be creamy, cheesy, and loaded with steak.
