Stuffed French Toast Bites

These mini French Toast Bites are stuffed with creamy nutella and Biscoff cookie butter. Dipped in french toast batter than, pan fried in butter and then tossed in a cinnamon-sugar coating.

Ingredients

  • 8 slices thick-sliced white bread or brioche bread
  • 4 tablespoons chocolate hazelnut spread like Nutella
  • 4 tablespoons cookie butter like Biscoff
  • 3 tablespoons butter

French Toast Batter

  • 1/3 cup heavy cream
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Cinnamon-Sugar Coating

  • 1/4 cup granulated sugar
  • 1 tablespoon cinnamon

Instructions

  • Spread a thin layer of one spread flavor (either nutella or cookie butter) onto one slice of bread. Top it with another slice of bread to make a sandwich.
  • Use a serrated knife to cut off all the crust, be gentle to avoid mashing the bread which will misshapen the french toast bites.
  • Repeat with the alternate flavor (if using both) so some sandwiches are the cookie butter variation and others are nutella.
  • Cut each of the sandwiches into 4 equal squares. In a large bowl whisk together all of the french toast batter ingredients.
  • Heat a large skillet to medium-low and melt butter in the skillet.
  • Dunk several french toast bites into the batter at a time and then place in the skillet. Cook in batches a few minutes per side until each side is golden brown.
  • Toss in the cinnamon mixture and serve warm.

Notes

To avoid the fillings from melting out while toasting, be sure not to overfill the bread with too much spread. A thin coating will do. It's always best to use a non-stick skillet in the event a little of the spread does ooze out as it cooks, it should be a minimal amount and that's normal.
