Italian Sausage Gnocchi

- 1 lb spicy ground Italian sausage
- 1 lb gnocchi uncooked
- 1 medium onion diced
- 4 cloves garlic minced
- 2 tablespoons flour
- 1 tsp italian seasoning
- 1/2 - 1 tsp red pepper flakes
- 1/2 tsp salt
- 1 tsp freshly grated black pepper
- 1 cup chicken stock
- 1 cup heavy cream
- 8 oz frozen chopped spinach thawed and well-drained
- 1/2 cup parmesan cheese freshly grated
- 1.5 cups pepper jack cheese
Preheat oven to 375 degrees.
Start by cooking up the ground Italian sausage in a large oven-safe skillet over medium-low heat. As the sausage cooks, add diced onion and garlic and saute until the sausage is cooked through.
Add in the seasonings and sprinkle over the flour, tossing everything to combine. Pour in the chicken stock and cream, bringing to a low boil. Taste and adjust the seasonings to your preference. Allow the pan sauce to thicken, about 2-3 minutes. Stir in half the parmesan and pepper jack to incorporate into the sauce.
Stir in the spinach and uncooked gnocchi. Top with remaining cheeses and bake for 18-20 minutes or until the top starts to get slightly toasted.
