Garlic Parmesan Chicken Sliders on Hawaiian Rolls

Tender pan-seared chicken smothered in a homemade garlic parmesan sauce, topped with melty cheese and added to toasted King's Hawaiian dinner rolls along with crispy bacon, lettuce, tomato and mayo.

Ingredients

  • 2 lbs. chicken tenders boneless chicken breasts and thighs work too
  • oil for marinade and cooking chicken
  • 1 pack Kings Hawaiian dinner rolls or slider buns
  • mayonnaise
  • colby jack cheese (cracker cut sized) enough slices for the sandwiches
  • 8 strips bacon, cooked crispy
  • 1/2 small red onion, sliced thin
  • 2 Roma tomatoes, sliced thin
  • 1/2 head lettuce, shredded

Garlic Parmesan Butter Sauce

  • 1 stick butter (8 tablespoons)
  • 8-10 cloves garlic, minced
  • 1/2 cup parmesan, grated extra for topping
  • 1 tbsp hot sauce more if desired
  • 2 teaspoons red pepper flakes
  • 1/3 cup fresh parsley, minced

Chicken Seasonings

  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Start by combining your chicken seasonings and place them in a large bowl or zip-top page. Cut chicken into 4" slider sized-pieces and add them in with the seasonings along with a few tablespoons of olive oil. Toss the chicken with the spices, coating well on all sides. Set aside while you prepare the garlic butter.

Make the Garlic Parmesan Butter Sauce

  • Melt the butter over low heat in a saucepan. Add minced garlic, red pepper flakes, hot sauce and parmesan. Whisk together until garlic is fragrant, about 1-2 minutes. Remove from heat and add parsley, whisking to combine.

Cook The Chicken

  • Cook chicken either in an oiled skillet over medium-high or grill the chicken. As they cook, spoon over the garlic parmesan butter and baste it over the chicken on both sides as they cook. Allow chicken to cook until the internal temp reaches 165 degrees.
  • Once chicken is cooked through, hit them with a final pass of the garlic sauce and sprinkle with some extra parmesan. Turn off heat and top each piece of chicken with colby jack cheese, cover with a lid and allow it to melt slightly, about 5 minutes.

Assemble the Sliders

  • If needed, slice the sliders horizontally using a serrated knife. Place them cut side up onto a baking sheet and toast under a broiler (or on your grill) until light golden brown, just a few minutes.
  • Flip the top buns so the domed tops are facing up and leave them beside the bottom buns on the pan. Toast again for until they are golden brown.
  • Add mayo to the bottom buns, spreading until smooth. Top the sliders with chicken, then top with bacon, tomatoes, red onion, and lettuce. Place the top buns over the sandwiches, slice to separate them and serve.
