Crock Pot Cinnamon Rolls

Pillowy soft slow cooker cinnamon rolls are cooked up in a crock pot for the perfect set-it-and-forget-it breakfast or dessert for a crowd. This is perfect for the fall and holiday season!
**The cook time will largely depend on the size of your crock pot. Larger crock pots will cook faster since the cinnamon rolls will be cooking in an even layer. The smaller the crock pot, the thicker this mixture will be. If this is the case, you'll need to begin stirring the mixture every 30 minutes, after the first 2 hours of the cook time lapses. When I tested this in my small crock pot, it took around 4-5 hours on low.

Ingredients

  • 2 cans cans of cinnamon rolls like Pillsbury
  • 2/3 cup heavy whipping cream
  • 3 eggs
  • 4 tbsp brown sugar
  • 4 tbsp butter melted
  • 2 tsp vanilla extract
  • 1 ½ tsp cinnamon

Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 4 tablespoons butter, softened
  • 1 1/2 cups powdered sugar
  • 2-3 tablespoons milk
  • 1/2-1 tsp cinnamon

Instructions

  • Spray the slow cooker with non stick spray.

Cream Cheese Frosting

  • Whisk the icing ingredients until smooth. Set aside.

Cinnamon Roll Assembly

  • Combine the heavy cream, eggs, brown sugar, butter, vanilla, and cinnamon into a medium bowl. Whisk until smooth.
  • Use a knife to quarter each cinnamon roll (cutting into four pieces). Place half of the cinnamon roll pieces evenly into the bottom of the slow cooker.
  • Pour the heavy cream mixture over the top of the cinnamon rolls. Top with remaining pieces of cinnamon rolls.
  • Drizzle half of the icing over the top of the cinnamon rolls in the crock pot.

Slow Cook Cinnamon Rolls

  • Cover and cook on low for 2-2.5 hours or until cinnamon rolls are cooked through (see notes below for varying cook times based on the crock pot size).
  • Drizzle the cinnamon rolls with the remaining cream cheese frosting. Scoop and serve! I love to serve these for Christmas morning brunch or for dessert, ala mode with vanilla ice cream.

Notes

NOTE: 
The cook times for these crock pot cinnamon rolls may vary depending on the type of slow cooker you have. Crock Pot sizes can vary from 2-10 quarts (and beyond). 
If you have a smaller slow cooker, the cinnamon roll layers will be thicker which can cause the cinnamon rolls on the bottom and sides cook faster (or even burn) before the middle and top cook through. To fix this, you'll need to cook these longer than two hours, and you'll need to gently stir this mixture every ~30-45 minutes or so, folding the mixture so the top and middle can reach the bottom of the pan. 
Continue to cook, checking on the mixture every 30-45 minutes until it's cooked through without any raw dough. This may take 4-5 hours on low. Don't be tempted to spike the temp to high in order to get a faster cook time. This will cause the cinnamon rolls to burn.
