Full of bright vibrant flavors, these Cilantro Lime Air Fryer Chicken Skewers are tangy, herby, incredibly moist and so tender they just fall right off the skewers.Guilt-free chicken skewers are easy to make and don't require any marinading time. wooden or metal skewers air fryer sized and if using wood: soaked in water for 30 minutes
Ingredients
2lbschicken tenderloins, diced into 2-3" piecesbreast or thighs work too
1tablespooncajun seasoninglow sodium
1.5cupscilantrobottom half of large stems removed
3/4cupplain greek yogurt2% or higher
2garlic cloveschopped
2small jalapeñosseeded
juice of 1/2 limeabout 1 tablespoon
1/2tspsalt
freshly cracked pepper
Instructions
Soak wooden skewers in water 30 minutes before cooking.
Dice chicken into 2-3" pieces and season liberally with cajun seasoning.
Make the Cilantro Lime Sauce
In a food processor or blender add in the greek yogurt, garlic, cilantro, jalapeno, lime juice and salt and pepper. Blend until smooth and pureed.
Pour about half the sauce into a large bowl with the chicken and toss the chicken pieces until they are fully coated.
Separate remaining sauce into two small bowls - one for coating raw chicken, the other "clean" sauce for coating cooked chicken.
Skewer Chicken
Add chicken pieces onto the skewer, packing them tightly together so each piece is touching. Don't leave gaps between the chicken as it will cause it to dry out as it cooks.
Air Fry Chicken
Place a few skewers at a time into an air fryer. Set at 400 degrees for 4 minutes. Flip the chicken, use the first bowl of sauce and a basting brush to coat more sauce onto the chicken.
Cook another 5 minutes at 400 degrees. Wash the brush to prevent cross-contamination.
Flip skewers again and baste once more (with the second bowl of "clean" sauce). Air fry for another 1-2 minutes at 400 degrees or until internal temp reaches 165 degrees.
Before serving, drizzle the skewers with more sauce.
