Ingredients

  • 5-6 cups super sweet corn, fresh or frozen
  • 1/2 small red onion, diced
  • 1 stick butter, cut into cubes cut into cubes
  • 1 block cream cheese, divided into chunks 8 oz block
  • 1/3 cup half and half
  • 2 tablespoons granulated sugar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp of cayenne
  • 1/2 cup grated Parmesan
  • Toppings: crispy bacon (6-8 strips), red onion, green onion, jalapenos, shredded colby jack cheese (1 cup)

Instructions

  • Combine all ingredients except Parmesan in a slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once it's cooked through and cream cheese is fully melted, add 1/2 cup grated Parmesan cheese. Adjust the salt and pepper as needed
  • Add the toppings of your choice then cover and keep warm until serving, allowing the cheese to melt through.
