S'more Honey Cookie Treats

A soft honey cookie is the unique base on my version of s’mores! These are chewy, gooey, messy and AMAZING! Great for a no-frills crowd, kids, or just you! 🙂 Serve them rustic style, straight on the pan so each person can pull off their own cookies.

You start with a homemade honey cookie dough (using 2/3 cup of honey!). I choose to replace the sugar with honey to give you that classic honey flavor reminiscent of graham crackers. But instead of a crunchy graham cracker, you get a a super soft cookie crust.

Once the cookie is half baked, top it with chocolate chips and pop back into the oven for a few minutes. Spread the softened chips with an offset spatula. Then pile marshmallows on top of the chocolate and turn the oven to broil to toast.

To finish it off, I top the marshmallows with crunched up Golden Graham cereal, then drizzle with melted chocolate to secure them into place. Viola! Toasty s’mores any time of year 🙂

S’more Honey Cookie Squares


  • 1 cup butter, softened
  • 3/4 cups brown sugar, packed
  • 2 eggs
  • 2/3 cups honey
  • 2 teaspoons vanilla extract
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 cups chocolate chips (good quality, always)
  • approx 1/2 bag miniature marshmallows
  • 1 cup chopped Golden Graham cereal


Pre-heat oven to 350 degrees. Prepare a cookie sheet lined with parchment paper for easy cleanup

In a mixing bowl, cream together butter and brown sugar until light and fluffy. Add eggs, one at a time. Mixing to combine. Add the honey (spray measuring cup with nonstick spray before measuring honey). Then add vanilla and mix until smooth. Add flour and baking soda and mix until just combined.
Turn out dough on cookie sheet. Use offset spatula spread dough until it's smooth and evenly distributed.

Bake for 15-18 minutes. Remove from the oven (dough will still be undercooked but will continue to cook during next processes). Pour 1 1/2 cups of the chocolate chips onto the dough. Return to the oven for 2-4 minutes, until the chips are softened. Spread the chocolate across the cookie using the offset spatula.
Switch the oven to Broil. Add the marshmallows onto the chocolate layer, covering fully. Broil for a 2-4 minutes, until nice a toasty brown on top. Watch them carefully to prevent overcooking.
Sprinkle the top of the toasted marshmallows with the chopped Golden Grahams, pressing them down into the sticky marshmallows slightly. Melt the remaining 1/2 cup of chocolate chips in the microwave for 30 seconds. Using a spoon, drizzle melted chocolate over the top of the finished cookie. Serve warm!
