Valentine Heart Sandwich Cookies with Fudge Filling

Ingredients

  • 1 drop pink gel food color

Heart Cookies

  • 4 cups cake flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 1/2 cup granulated sugar
  • 2 egg whites
  • 3 tablespoons heavy cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon almond extract
  • 1 drop pink gel food color
  • 1 drop purple/lavender gel food color

Chocolate Buttercream

  • 1/2 cup butter, softened (1 stick)
  • 3 cups confectioners sugar
  • 1/2 cup cocoa powder
  • 1/3 cup whole milk (room temp-ish)
  • 2 teaspoons vanilla extract

Optional

  • 1/2 cup white chocolate chips (quality brand is important so it melts well)

Directions

Heart Cookies
In a medium bowl, combine all of the dry ingredients and whisk well. Set aside.
In a large mixing bowl, cream the butter and sugar together until fluffy. Add egg whites, vanilla and almond extract and heavy cream. Continue to mix until combined and smooth. Scrape the bowl as needed. Add in the dry ingredients slowly, a little at a time. Wrap dough in seran wrap and refrigerate/freeze for 30 minutes to set up.
Preheat oven to 350. Prepare baking sheet with parchment paper and set aside.

Divide dough in half. Add one drop of pink color to one half and purple to the other. On a floured surface, mix each dough well until the color is fully incorporated, adding a little bit more flour as needed. Roll out to 1/4 inch thick and use a heart cookie cutter. Continue until no dough remains.

Bake for 8-11 minutes. Cool on a cooling rack and allow to fully cool before frosting.
Frosting and Assembly
Prepare the fudge filling by combining all of the ingredients in a medium bowl. Using a hand mixer, beat until smooth and creamy. Add a tad more milk or confectioners sugar if needed to get the desired consistency.

Place frosting in a piping bag with preferred piping tip. Pair cookies together that are most matching and pipe the frosting on the underside of each bottom cookie. Top with matching cookie.
Optional
For additional decoration if desired, melt half of the white chocolate in a microwave safe bowl for 40 seconds, stopping and stirring each 10 seconds. Add the remaining chocolate and mix together until fully melted. Color with just a small dot of gel color of your choice. Drizzle lightly over a few of the finished sandwich cookies.
