Fluffy, hearty and simple! These are a great go-to for make ahead meals. I usually cook on Sundays for the week and when I am short on a time (like this week, with my work conference in full swing) breakfast casseroles are the seriously the best way to go! We usually add sriracha or different types of salsa to change it up and keep it from getting boring after a few days in a row (tomatillo, pico de gallo, etc).
High Protein 4-Ingredient Breakfast Casserole
Ingredients
- 4 cups 100% Egg whites
- 8 Chicken sausage links, chopped (Applegate Farms)
- 3 cups Chopped fresh spinach
- 1/3 cup Non-fat feta cheese
Directions
Grease an 8x8 casserole dish. Preheat oven to 375 degrees. | |
Pour the liquid egg whites into the casserole dish and add all remaining ingredients and mix well, until all ingredients are evenly distributed. | |
Bake for 35-40 minutes, or until a toothpick inserted at the thickest part comes out clean. Allow the casserole dish to cool on a cooling rack for 30 minutes, then cut into four equal parts. |
